NIKKI'S CINNAMON WALNUT BREAD

Nikki's Cinnamon Walnut Bread image

This is my family's favorite breakfast bread. The bread machine does the work, and the filling makes it a treat. Be careful when chopping the walnuts, as if they are too finely chopped, the filling gets mushy. Enjoy!

Time 4h15m

Yield 12

Number Of Ingredients 18

3 cups bread flour (such as King Arthur®)
¾ cup milk, room temperature
¼ cup unsalted butter, room temperature and cut into chunks
¼ cup white sugar
1 egg, room temperature
1 tablespoon ground cinnamon
1 ½ teaspoons active dry yeast
¾ teaspoon salt
2 cups chopped walnuts
⅓ cup packed light brown sugar
3 tablespoons white sugar
1 tablespoon ground cinnamon
4 teaspoons milk
1 tablespoon butter, softened
1 tablespoon water
1 egg, beaten
2 tablespoons white sugar
2 teaspoons ground cinnamon

Steps:

  • Place bread flour, 3/4 cup milk, 1/4 cup unsalted butter, 1/4 cup white sugar, 1 egg, 1 tablespoon cinnamon, yeast, and salt into the pan of your bread machine in the order recommended by the manufacturer. Select the Dough cycle and press Start. When the cycle is complete, remove the dough, punch down, cover, and let rest for 10 minutes.
  • Preheat an oven to 275 degrees F (135 degrees C). Spread the walnuts onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 45 minutes. Watch the nuts carefully as they bake, they burn quickly. Once toasted, set the nuts aside to cool to room temperature.
  • Stir walnuts, brown sugar, 3 tablespoons white sugar, and 1 tablespoon cinnamon together in a bowl. Add 4 teaspoons milk and 1 tablespoon butter; mix well.
  • Turn dough out onto a lightly floured surface and roll into a 15x12-inch rectangle. Cut into three 15x4-inch strips. Spread 1/3 the walnut mixture down the center of each strip. Moisten and roll the long edges of each strip together over the filling, and pinch to seal each rope.
  • Line up the 3 ropes 1 inch apart on an ungreased baking sheet. To ensure an even braid, start braiding in the middle. Bring the left rope under the center rope, pass the right rope under the new center rope, and repeat braiding to the end. Starting in the middle again, pass the outside ropes over the center rope, repeating to the end. Press rope ends together and tuck in on each side. Cover loaf with a damp cloth and let rise until doubled in volume, about 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat water and egg together in a small bowl. Stir 2 tablespoons white sugar and 2 teaspoons cinnamon together in a separate bowl. Brush loaf with egg mixture and sprinkle with cinnamon sugar.
  • Bake in preheated oven until the top is golden brown and the bottom of loaf sounds hollow when tapped, 20 to 25 minutes.

CINNAMON ROLL BREAD

Cinnamon Roll Bread image

This stunning bread is made from 16 small cinnamon rolls that are arranged in a loaf pan, creating a swirled pattern that's surprisingly easy to achieve. The bread is delicious served slightly warm, but if you want to see precise spirals in your slice, let it cool completely before slicing. The icing is meant to be quite thick; if you apply it while the loaf is still warm, it will remain soft and gooey. If you apply it once the bread is fully cooled, it will harden to a thick, glossy frosting. Both are equally delicious, and which one you choose may depend entirely on how patient you can be once the aroma permeates your kitchen.

Time 1h30m

Yield One 9-inch loaf

Number Of Ingredients 18

Nonstick cooking spray
1 cup/240 milliliters whole milk
3 cups/385 grams all-purpose flour
1/3 cup/65 grams granulated sugar
2 teaspoons instant yeast
1/2 teaspoon fine sea salt
6 tablespoons/85 grams unsalted butter (3/4 stick), at room temperature
1 large egg, at room temperature
8 tablespoons/115 grams unsalted butter (1 stick), melted
2/3 cup/145 grams light brown sugar
1/4 cup/30 grams all-purpose flour, plus more for rolling
2 1/2 teaspoons ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon fine sea salt
1 large egg
1 cup/125 grams confectioners' sugar
3 tablespoons heavy cream, plus more as needed
1 teaspoon vanilla extract

Steps:

  • Grease a 9-inch loaf pan with nonstick cooking spray and line with a parchment paper sling, leaving a 2-inch overhang on the long sides.
  • Pour the milk into a small pot and heat over low until it's just warm to the touch (about 95 degrees). If needed, let cool to the correct temperature before using.
  • While the milk heats, in the bowl of an electric mixer fitted with the dough hook, mix the flour, granulated sugar, yeast and salt to combine. Add the warm milk, butter and egg and mix on low speed until the dough comes together, about 3 minutes. Scrape the bowl well, and mix on medium speed for another 3 minutes.
  • Transfer to a lightly greased medium bowl and cover with plastic wrap. Let rise until puffy and almost doubled in size, 45 minutes to 1 hour.
  • While the dough rises, make the filling: In a medium bowl, whisk the butter and brown sugar until well combined. Whisk in the flour, cinnamon, vanilla and salt until well incorporated.
  • When the dough has risen, roll it out into into a rectangle (about 12 by 20 inches) on a lightly floured surface using a lightly floured rolling pin. Spread the filling over the dough in an even layer all the way to the edges. Starting on one of the long sides, tightly roll up the dough crosswise into a 20-inch log. Gently stretch the log to make it about 24 inches long.
  • Use a sharp or serrated knife to cut the dough into 16 1 1/2-inch-thick pieces. Arrange the cinnamon rolls in the loaf pan: Place two rows of six pieces each at the bottom of the pan, side-by-side, seam-side down and tightly packed with the swirls facing the ends of the pan. Arrange the remaining four pieces in the center on top of those on the bottom.
  • Loosely cover the loaf with plastic wrap and let rise until the dough comes about 1 inch over the top edge of the pan, about 1 hour (it can be more if your room temperature is cooler). Toward the end of the rise time, heat the oven to 350 degrees.
  • Make an egg wash by lightly beating 1 egg and 1 tablespoon water together. Brush the loaf with the egg wash, then bake until the loaf has an internal temperature of 200 degrees, about 50 to 55 minutes. The loaf will brown quickly; tent it with foil after 20 to 25 minutes for the remainder of baking time.
  • While the loaf bakes, make the glaze: In a medium bowl, whisk the confectioners' sugar, cream and vanilla to combine. The mixture should be thick, more like a frosting than a glaze. Add more cream if needed to achieve a smooth texture. Cover with plastic wrap, pressing the wrap into the surface of the frosting so the surface doesn't harden.
  • Let the bread cool in the pan for 15 minutes. Use a small offset spatula to loosen the loaf from the short edges of the pan, then lift out the loaf using the parchment paper and cool for at least 30 minutes on a cooling rack before applying the frosting. Spread the frosting in an even layer over the surface of the loaf.

CINNAMON CRUNCH BANANA BREAD

Cinnamon Crunch Banana Bread image

This easy cake - no mixer required - is a popular staple at Bakesale Betty in Oakland, Calif. Pie, cake, cookies and a legendary fried chicken sandwich are the only things on the menu, but locals start lining up long before opening time. They're that good. Betty herself, the baker Alison Barkat, adds a cinnamon-sugar topping and honey to the classic banana bread formula for a deeply caramelized, moist result.

Categories     breakfast, snack, breads, quick breads

Time 1h30m

Yield 1 (9-by-5-inch) loaf

Number Of Ingredients 14

Unsalted butter, for greasing
1 1/2 cups/190 grams all-purpose flour
1 cup/200 grams granulated sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup/120 milliliters vegetable oil
2 large eggs
1/4 cup/60 milliliters honey
1 cup mashed ripe bananas (from 2 to 3 medium bananas)
1/4 cup/60 milliliters warm water
1/4 cup/55 grams brown sugar, preferably light brown or Demerara sugar
2 tablespoons granulated sugar
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 350 degrees. Butter a 9-by-5-inch loaf pan and line it with parchment or wax paper, leaving enough paper hanging over the sides to lift the cake out after baking. (This will prevent the topping from breaking when removing the bread from the pan.)
  • Prepare the batter: In a medium bowl, combine flour, granulated sugar, cinnamon, baking soda and salt. In a large bowl, using a sturdy whisk, beat together oil, eggs and honey until smooth. Stir in bananas and warm water. Add dry ingredients to egg-oil mixture and stir to blend. Pour batter into prepared pan.
  • Make the topping: In a small bowl, mix brown sugar, granulated sugar and cinnamon, using your fingers to break up any lumps. Sprinkle evenly over batter.
  • Bake until a tester inserted into the center comes out clean, about 1 hour, checking after 50 minutes. If topping shows signs of burning, reduce heat to 325 degrees.
  • Remove to a rack and let cool in pan for 30 minutes. Use the edges of the paper to lift the cake up and out. Place on a rack (leave the paper on) and let cool before slicing and serving.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the taste of your bread.
  • Measure your ingredients carefully: This is important for getting the right texture and flavor.
  • Don't overmix the batter: This can make the bread tough.
  • Bake the bread until a toothpick inserted into the center comes out clean: This is the best way to ensure that the bread is cooked through.
  • Let the bread cool completely before slicing: This will help it hold its shape.

Conclusion:

This cinnamon nut bread is a delicious and easy-to-make treat that is perfect for any occasion. It is moist and flavorful, with a wonderful aroma. The nuts add a nice crunch and texture, and the cinnamon gives it a warm and inviting flavor. This bread is also very versatile. It can be served for breakfast, lunch, or dinner, and it also makes a great snack. So next time you are looking for a simple and delicious recipe, give this cinnamon nut bread a try.
