SWEET-AND-SOUR QUICK PICKLES

Sweet-and-Sour Quick Pickles image

Inspired by classic bread-and-butter pickles, these sweet-and-sour pickles are a bit more sour than sweet with a hint of mustard and dill. Apple cider vinegar lends a fruitier flavor to the no-cook brine than white vinegar, which is often used for making cucumber pickles.

Freezer Dill Pickles image

Got a bumper crop of cucumbers? Make a batch of these easy pickles and stash them in the freezer -- you're going to love having the tangy treats in your back pocket in the months to come.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 2h10m

Yield Makes 1 quart

Number Of Ingredients 7

1 pound cucumbers, sliced 1/8 inch thick (3 1/2 cups)
1/2 sweet onion, quartered crosswise and thinly sliced (1 cup)
1/2 cup sugar
1/2 cup distilled white vinegar
Kosher salt
1/4 cup dill sprigs
1 tablespoon mustard seeds

Steps:

  • Place cucumbers and onion in a medium heatproof bowl.
  • In a small saucepan, combine sugar, vinegar, 1 tablespoon salt, and 1/4 cup water. Bring to a boil, stirring just until sugar dissolves. Pour over cucumber mixture; let cool completely, 1 hour. Let stand 1 hour more, then stir in dill and mustard seeds.
  • Divide among two pint-size glass jars; freeze at least 1 week and up to 6 months.

Tips:

  • Choose the right cucumbers: Use pickling cucumbers, which are smaller and have thinner skins than regular cucumbers. This will help them absorb the pickling solution better.
  • Slice the cucumbers evenly: This will help them pickle evenly.
  • Use a clean container: Make sure the container you use to store the pickles is clean and sterilized. This will help prevent the pickles from spoiling.
  • Keep the pickles refrigerated: Once the pickles are made, store them in the refrigerator. This will help them last longer.
  • Use a variety of spices: Feel free to experiment with different spices and herbs to create your own unique pickle recipe.

Conclusion:

Sweet pickles are a delicious and refreshing snack that can be enjoyed all year long. By following these tips, you can easily make your own sweet pickles at home. So next time you're looking for a sweet and tangy treat, give these recipes a try!
