EASY LIGHTLY FRIED FISH - THYME AND SPICES - MEDITERRANEAN

Easy Lightly Fried Fish - Thyme and Spices - Mediterranean image

This is just a really simple and easy, and quick, and delicious version of friend fish fillets. Serve it with whatever side you would like - I personally like it with a nice fresh vegetable salad, like a Greek/Aegean/Hortaki. It is parve, so you can go ahead and eat it with dairy.

Time 30m

Yield 4 fillets (large), 4-6 serving(s)

Number Of Ingredients 13

4 tilapia fillets (any boneless fish works, e.g. haddock, sole)
1 egg (binding agent, may need two if they are smaller)
1 lemon
fresh thyme sprig (a few will do, more for garnish or decor)
1/2 cup flour
salt
pepper
chili powder
paprika
cumin
oregano
spices (any that you like!)
vegetable oil (for frying)

Steps:

  • thaw the fish if frozen - rinse it under water and pat dry if you wish.
  • preheat about an inch of oil in a pan.
  • cut the fillets into smaller pieces if you want.
  • crack the egg into a shallow bowl and beat - add a pinch of salt and pepper.
  • prepare the spiced fish fry coating - mix roughly 50:50 flour:spices. I suggest adding a fair amount of salt and pepper, and also chili powder if you like it hot. ANY COMBO OF SPICES WORK, be liberal. MIX UNTIL HOMOGENOUS.
  • dip the fish in egg - let the extra egg drip off (tap against the side of bowl).
  • coat both sides of the egged up fish in the frying coating.
  • carefully (hot oil is dangerous!) fry both sides of the fish in the oil until golden brown on both sides, and the inside of the fish is flaky and white.
  • dry on paper towels lined with a bed of thyme.
  • garnish with lemon wedges and thyme sprigs (optional).

Time 30m

Number Of Ingredients 6

1 1/2 lb haddock, sole or cod
1 large egg, room temperature, beaten
2 Tbsp milk
2 c crushed cornflakes
tarter sauce or cocktail sauce optional
lemon wedges if desired

Steps:

  • 1. Thourgly clean fish and cut into serving-size pieces. In a medium bowl, combine beaten egg & milk. Place crushed cornflakes in a separate bowl or platter.
  • 2. Dip fish into the egg mixture, and then coat with the crushed corn flakes on both sides.
  • 3. In a large skillet(preferably cast iron) over high heat, add 1 inch cooking oil. When oil is hot, fry the pieces of coated fish until it is lightly browned on both sides. Serve while still hot. If desired serve with lemon wedges or optional seafood sauce, or tarter sauce.

Tips for Frying Fish Perfectly:

  • Choose the Right Fish: Select firm-fleshed fish such as cod, tilapia, or catfish, which hold their shape well during frying.
  • Properly Clean and Prepare the Fish: Clean and pat the fish dry before frying to prevent splattering. Make sure to remove any bones or scales.
  • Seasoning is Key: Enhance the flavor of your fish by seasoning it with salt, pepper, and other spices before frying. You can also use a marinade to add extra flavor.
  • Choose the Right Cooking Oil: Opt for a high smoke point oil like vegetable oil, canola oil, or peanut oil, which can withstand high temperatures without burning.
  • Maintain the Right Temperature: Use a thermometer to ensure the oil is at the ideal temperature (usually between 350°F and 375°F) before adding the fish. This prevents the fish from absorbing too much oil and ensures a crispy exterior.
  • Don't Overcrowd the Pan: Avoid overcrowding the pan with fish fillets or pieces, as this can cause the oil temperature to drop, resulting in soggy fish.
  • Cook in Batches: If frying a large quantity of fish, cook in batches to maintain the oil temperature and prevent overcrowding.
  • Flip Carefully: Use a spatula to gently flip the fish only once during frying to prevent it from breaking apart.
  • Drain on Paper Towels: After frying, transfer the fish to a plate lined with paper towels to absorb excess oil.

Conclusion:

Frying fish can be a quick and delicious way to prepare a meal. By following these tips and using the provided recipes, you can achieve perfectly fried fish with a crispy exterior and tender, flaky interior. Experiment with different seasonings, marinades, and side dishes to create a variety of flavorful and satisfying fried fish dishes that your family and friends will love.
