Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Categories     Dinner

Time 1h20m

Yield 6 servings

Number Of Ingredients 14

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
  • Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
  • Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
  • Slice and serve.
  • Enjoy!

Tips:

  • Choose the right meat: A combination of ground beef, pork, and veal creates a moist and flavorful meatloaf. You can also use all beef or all pork, but adjust the cooking time accordingly.
  • Season the meatloaf well: A good meatloaf should be packed with flavor. Use a variety of herbs and spices, such as garlic powder, onion powder, paprika, oregano, and thyme.
  • Don't overmix the meatloaf: Overmixing the meatloaf will make it tough. Mix the ingredients just until they are combined.
  • Shape the meatloaf into a loaf: Use your hands to shape the meatloaf into a loaf shape. Make sure it is evenly packed.
  • Cook the meatloaf at a low temperature: Cooking the meatloaf at a low temperature will help it to stay moist and prevent it from drying out. Cook it at 350 degrees Fahrenheit for 1 hour and 15 minutes, or until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for 10 minutes before slicing. This will help the juices to redistribute throughout the meatloaf, making it more tender.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. By following these tips, you can make the best meatloaf you've ever tasted. So next time you're looking for a hearty and satisfying meal, give this recipe a try. You won't be disappointed.
