Tips:

  • For a gluten-free tart shell, use a combination of almond flour, tapioca flour, and coconut flour.
  • To make the tart shells ahead of time, bake them and let them cool completely. Store them in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.
  • If you don't have a tart pan, you can use a muffin tin. Just fill each muffin cup with the tart dough and bake according to the recipe instructions.
  • To make the lemon filling, use fresh lemon juice for the best flavor. If you only have bottled lemon juice, add a little bit of lemon zest to brighten up the flavor.
  • If you don't have heavy cream, you can use milk or half-and-half instead. Just be aware that the filling will be a little thinner.
  • To make the meringue topping, use room temperature egg whites. This will help them whip up more easily.
  • If you don't have a kitchen torch, you can brown the meringue topping by placing the tarts under the broiler for a few minutes. Just watch them closely so they don't burn.
