Time 30m

Number Of Ingredients 9

SOUP:
2 pkg (10 ounces each) frozen chopped spinach, drained
2 can(s) (10 ounces each) cream of mushroom soup, concentrated
1 c half and half
1 c (14 ounces) chicken broth
4-6 slice bacon, cooked and crumbled
salt and pepper to taste
OPTIONAL GARNISH:
croutons or fresh parsley

Steps:

  • 1. Place spinach, mushroom soup, and half and half in blender. You may need to work with half of this mixture at a time if blender is not big enough to accomodate all at once. Puree in blender until smooth.
  • 2. Place pureed mixture in saucepan with remaining ingredients (except, of course, garnish), bring to a simmer, reduce heat to low, and cook for about 20 minutes to blend all flavors.
  • 3. Garnish is optional but crunchy croutons are nice.

Tips:

  • Select Fresh Spinach: Opt for spinach with vibrant green leaves and avoid wilted or yellowing ones.
  • Chop Spinach Properly: For even cooking, chop the spinach coarsely.
  • Use a Variety of Vegetables: Add other vegetables like carrots, celery, and onions for a more flavorful soup.
  • Use Vegetable or Chicken Broth: Depending on your preference, use vegetable broth for a vegetarian option or chicken broth for a richer flavor.
  • Add Spices and Herbs: Experiment with different spices and herbs like garlic, onion powder, salt, pepper, and paprika for extra flavor.
  • Adjust Consistency: Use an immersion blender or blender to achieve your desired soup consistency, whether smooth or chunky.
  • Serve with Toppings: Enhance the soup's presentation and flavor with toppings such as croutons, grated Parmesan cheese, or a dollop of sour cream.
