EASY WHITE CHICKEN CHILI

Easy White Chicken Chili image

Super easy and delicious chili! Perfect on rainy days or cold ones. This is something my grandmother threw together and it has been in the family for years. Very delicious with cornbread!

Provided by Linda Pulley

Categories     Chili

Time 1h30m

Number Of Ingredients 10

4 c chicken broth
4 15 oz cans of pinto beans or great northern beans
2 c shredded chicken
2 4 oz cans of diced green chilies
1 tsp cumin
1 tsp garlic powder
1 tsp oregano
1 tsp black pepper
1 c sour cream
2 c shredded cheddar cheese

Steps:

  • 1. Place chicken in a large pot ( about 1 pound ) and heat to a boil. Reduce heat to a medium and continue boiling for 45 minutes or until chicken is cooked through. Shred chicken.
  • 2. Clean out the same pot. Add shredded chicken, broth, green chilies, cumin, garlic powder, oregano and pepper. Simmer on low/medium heat for 30 minutes.
  • 3. Right before serving stir in sour cream and cheese until well blended.

Tips:

  • Choose the right beans. Great Northern beans, navy beans, and cannellini beans are all good choices for white chili. They hold their shape well and have a mild flavor that won't overpower the other ingredients.
  • Soak the beans overnight. This will help them cook more evenly and reduce the cooking time.
  • Use a variety of vegetables. Onions, garlic, celery, and carrots are all classic white chili vegetables. But you can also add other vegetables like corn, zucchini, or bell peppers.
  • Use a good quality broth. Chicken broth or vegetable broth are both good options. Avoid using water, as it will make the chili bland.
  • Season the chili to taste. Chili powder, cumin, and cayenne pepper are all classic white chili spices. But you can also add other spices like oregano, thyme, or smoked paprika.
  • Simmer the chili for at least 30 minutes. This will allow the flavors to meld and the chili to thicken.
  • Serve the chili with your favorite toppings. Shredded cheese, sour cream, diced avocado, and chopped cilantro are all popular toppings for white chili.

Conclusion:

White chili is a delicious and comforting soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With a few simple tips, you can make a pot of white chili that will be sure to please everyone at your table.
