Goes prefect with Recipe #232612. These sweet potatoes are so good. You can leave out the Bourbon if serving to kids--still tastes very good without the bourbon.

1 3/4-2 lbs sweet potatoes
1/2 cup heavy cream
1/4 cup bourbon whiskey
3 tablespoons light brown sugar
2 tablespoons molasses
1/8 teaspoon salt
8 tablespoons unsalted butter
2 lbs yellow onions, peeled and thinly sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • Place potatoes on a foil lined baking sheet. Bake until tender and starting to ooze sugary syrup, about 1 hour and 15 minutes, depending on their size. Remove from the oven and let sit until cool enough to handle. Cut a slit down each potato and scoop the flesh into a large bowl. Discard the skins.
  • Add the cream, bourbon, brown sugar, molasses, and salt; beat on high speed with an electric mixer until smooth. Cover to keep warm, or gently reheat before serving.
  • Caramelized Onions:.
  • Melt the butter in a large skillet over medium-high heat. Add the onions, reduce the heat to medium-low, and cook slowly, stirring occasionally, until golden brown and caramelized, 45 minutes to 1 hour. Remove from heat and serve hot.

Although i have seen similar recipe's elsewhere, Emeril gets credit for refreshing my love of sweet potatoes. I watched him make this on Planet Green's Emeril Green.

4 sweet potatoes, peeled and roughly chopped
2 quarts water
1 tablespoon unsalted butter
salt & freshly ground black pepper
1/2 teaspoon ground cinnamon
2 tablespoons honey

Steps:

  • In a large pot over high heat, bring the sweet potatoes and water to a boil. Cook for 10 to 15 minutes or until the sweet potatoes are tender.
  • Drain well and return to the pot.
  • Add butter, salt and pepper to taste, cinnamon and honey and mash until all ingredients are combined.
  • Serve immediately.

2 pounds potatoes, peeled and diced
1 stick butter, cubed
1/2 to 3/4 cup heavy cream
Salt and white pepper

Steps:

  • Place the potatoes in a pot of salted water and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12 to 15 minutes. Remove the pan from the heat and drain. Place the potatoes back in the pot and return to the heat. Stir the potatoes, constantly, for 2 to 3 minutes to dehydrate the potatoes. Remove the potatoes from the heat. Add the butter. Using a hand-held masher, mash the butter into the potatoes. Add enough cream until desired smoothness is achieved. The potatoes should still be sort of lumpy. Season the potatoes with salt and pepper.

4 thick pork chops, 6 to 8 ounces each
2 teaspoons Essence, recipe follows
2 tablespoons vegetable oil
2 tablespoons all-purpose flour
1 1/2 cups thinly sliced onions
1/2 cup pecan pieces
2 cups water
1 teaspoon salt
1/4 teaspoon cayenne
1 pound sweet potatoes, baked, peeled and mashed (about 1 1/2 cups)
3 tablespoons Steen's 100 percent Pure Cane Syrup
1/4 cup chopped green onions
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Season the pork chops with the rub. Heat the oil in a large skillet over medium-high heat and brown the chops, about 5 minutes on each side. Transfer the chops to a warm platter and set aside.
  • Reduce the heat to medium. Add the flour and, stirring constantly, cook for 2 to 3 minutes, or until the roux is chocolate brown. Add the onions and water and cook, stirring occasionally, for 5 to 6 minutes, or until wilted. Add the pecans, water, salt, and cayenne and mix well. Bring to a boil. Add the sweet potatoes and blend to make a smooth mixture. Stir in the syrup and green onions. Return the pork chops to the pan, reduce the heat and simmer for 4 to 5 minutes, basting the chops with the gravy.
  • Serve immediately.

2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cold unsalted butter, cut into pieces
1 cup mashed cooked sweet potato, cooled
2 tablespoons packed light brown sugar
5 slices cooked bacon, drained and crumbled
3/4 cup buttermilk (or up to 1 cup if needed)

Steps:

  • Preheat oven to 425 degrees F.
  • Lightly grease a large baking sheet and set aside.
  • In a bowl; stir together the flour, baking powder, baking soda, and salt.
  • Add the butter and work in with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • In a bowl; whip the sweet potatoes with the brown sugar until very smooth. Add to the flour mixture and mix in lightly but thorougly with your fingers.

3 pounds Idaho potatoes, peeled and cut into 1-inch pieces
1 3/4 teaspoons coarse salt
1 stick (1/4 pound) unsalted butter, cut into pieces
1/2 cup heavy cream
1/4 teaspoon ground white pepper

Steps:
