2 cups frozen bell pepper and onion stir-fry (from 1-lb bag), thawed, well drained
4 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package), heated
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat closed contact grill 5 minutes. Brush both sides of steak with oil; rub with 2 teaspoons of the taco seasoning mix. Sprinkle vegetables with remaining taco seasoning mix.
  • When grill is heated, place steak and vegetables on bottom grill surface. Close grill; cook 4 to 8 minutes or until desired beef doneness.
  • Slice steak diagonally across grain into thin slices. Wrap steak and vegetables in warm tortillas; top with salsa.

1 tablespoon paprika
1 teaspoon dried cilantro flakes
1 teaspoon ground cumin
1/2 teaspoon each salt, garlic powder, cayenne pepper and pepper
1/2 teaspoon dried thyme
1/4 teaspoon white pepper
4 tablespoons olive oil, divided
2 tablespoons marinade for chicken
4 teaspoons lemon juice
1 tablespoon lime juice
1/8 teaspoon Liquid Smoke, optional
2 boneless skinless chicken breast halves (4 ounces each), cut into strips
1 medium onion, sliced
1 medium sweet red pepper, sliced
4 flour tortillas (6 inches), warmed
Optional toppings: sour cream, salsa, guacamole, shredded cheddar cheese, chopped lettuce and tomatoes

Steps:

  • Combine the seasonings; set aside 1 tablespoon. Add 2 tablespoons oil, marinade for chicken, juices and Liquid Smoke if desired to remaining mixture; pour into a large resealable plastic bag. 1/2 teaspoon chili powder

2 large chicken breasts, finely sliced
1 red onion, finely sliced
1 red pepper, sliced
1 red chilli, finely sliced (optional)
1 heaped tbsp smoked paprika
1 tbsp ground coriander
pinch of ground cumin
2 medium garlic cloves, crushed
4 tbsp olive oil
1 lime, juiced
4-5 drops Tabasco
6 medium tortillas
bag mixed salad
230g tub fresh salsa

Steps:

  • Heat oven to 200C/180C fan/gas 6 and wrap 6 medium tortillas in foil.
  • Mix 1 heaped tbsp smoked paprika, 1 tbsp ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tbsp olive oil, the juice of 1 lime and 4-5 drops Tabasco together in a bowl with a big pinch each of salt and pepper.
  • Stir 2 finely sliced chicken breasts, 1 finely sliced red onion, 1 sliced red pepper and 1 finely sliced red chilli, if using, into the marinade.
  • Heat a griddle pan until smoking hot and add the chicken and marinade to the pan.
  • Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.
  • To check the chicken is cooked, find the thickest part and tear in half - if any part is still raw cook until done.
  • Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.
