MAMA IULIUCCI'S FAMOUS MEAT-A-BALLS (ITALIAN MEATBALLS)
Here it is, my mom's FAMOUS Meatball recipe! This is THEE most requested of her for anything, anywhere! Whenever there is a shower, birthday, christening, etc., someone is asking for 150 to 200 of her famous meatballs. :) Of course, she always says yes! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed-up jarred sauce and they are still great. However, meat-a-balls like these deserve a homemade sauce, in my humble opinion!

Steps:
- Mix all ingredients gently in a large bowl until well combined.
- Roll meatballs 1 1/2- 1 3/4" in diameter.
- Heat about 1/4" of oil over medium heat in a large frying pan.
- Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.
- Drop meatballs in your favorite sauce (I highly recommend My Mama Iuliucci's"Don't Skip a Step" Spaghetti Sauce recipe#26947) and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce.
- Tip: You can also bake or broil these if the frying part is too much of a hassle-- I use my broiler pan if I bake them, so the fat drips down and away from the meatballs.

Steps:
- With your hands, combine the beef, veal, and pork in a large bowl. Add the eggs, cheese, parsley, minced garlic, and salt and pepper to taste and blend the ingredients together. Add the bread crumbs and blend into the meat mixture. Slowly add the water, 1 cup at a time, until the mixture is moist.
- Shape the meat mixture into 2 1/2 to 3-inch balls.
- Heat the oil in a large skillet. Sauté the whole garlic until lightly brown to flavor the oil, about 1 to 2 minutes.
- Remove the garlic with a slotted spoon and discard.
- Add the meatballs and fry in batches, being careful not to crowd the pan. When the bottom half of the meatball is well browned and slightly crisp, about 5 to 6 minutes, turn it and cook the other side for 5 minutes more.
- Remove the meatballs from the heat and drain them on paper towels.
DANA'S FAMOUS SWEDISH MEATBALLS
Being very into my Swedish heritage, I took it upon myself to learn how to cook the food, among other things. These are my famous Swedish Meatballs. I can never seem to make enough. Serve with lingonberries (cranberries are a good substitute) or with sour cream and beef gravy sauce heated.

Steps:
- 1. In a large mixing bowl, combine turkey and eggs until thoroughly mixed.
- 2. Add seasonings to suit your taste. I tend to be fairly heavy handed, especially with garlic and black pepper. ;) Mix completely.
- 3. Add cheese and bread crumbs. *If mixture is still too moist, feel free to add more bread crumbs until desired consistency is achieved.
- 4. Roll into large, walnut sized balls and set aside.
- 5. To fry: In a large skillet, warm 3 tablespoons oil over medium heat. Cook meatballs until golden brown, turning so that each side is browned. (Hint- a screen is helpful since the oil may pop and splatter like bacon).
- 6. To bake: Place meatballs on a foiled or lightly sprayed pan and bake in oven at 360 degrees for 30-35 min (oven times may vary).
- 7. Serving tip: My family likes these plain, with Contadina sweet and sour sauce (doctored up) on brown rice, in a marinara over your favorite pasta, slice in half on French rolls with marinara and cheese for a great meatball sandwich, in Swedish meatballs, in a BBQ sauce or anything for a party, you name it! They do freeze well too. Enjoy! ;).
FAMOUS MEATBALLS
These meatballs are a favorite for any occasion. I made 14 pounds of meatballs for my sister's graduation party and I only had 1 medium container left over. My mother made sloppy joes and needless to say they had a lot left over because everyone loved these meatballs. Guaranteed favorite!

Found this in a local newspaper from years ago. They taste like ones my mom used to make. They are "famous" and a favorite of my husband and son. I put them in my homemade spaghetti sauce. UPDATE: After reading your comments I decided to increase the ground beef to 2#lbs [instead of 1#lb]

ALMOST-FAMOUS SWEDISH MEATBALLS RECIPE - (4.4/5)
Provided by lakecar
Number Of Ingredients 22
Steps:
- Make the meatballs: put the breadcrumbs in a large bowl. Heat the butter in a skillet over medium heat. Add the onion, garlic, allspice, 2 tsp salt, and 1/4 tsp white pepper and cook, stirring, until soft, about 5 minutes. Add the milk and Worcestershire sauce and bring to a simmer. Pour the milk mixture over the bread crumbs and stir to make a thick paste; let cool. Add the beef, pork, egg and egg white to the bowl and mix until combined. Brush a baking sheet with vegetable oil. Roll the meat into 1-inch balls and arrange on the prepared sheet. Cover with plastic wrap and refrigerate at least 1 hour. Preheat the oven to 400 degrees. Bake the meatballs until cooked through, about 20 minutes. Make the gravy: melt the butter in a large skillet over medium heat. Add the flour and cook, whisking, until smooth, about 2 minutes. Whisk in the beef broth and Worcestershire a little at a time and bring to a simmer. Add the cream and the meatballs. Cover and simmer about 10 minutes. Sprinkle with parsley.
Tips:
- Choose the right meat: A combination of beef, pork, and veal is the most popular choice for meatballs, as it provides a good balance of flavor and texture. You can also use all beef or all pork, but the meatballs may be a bit denser.
- Use fresh bread crumbs: Fresh bread crumbs will help to bind the meatballs together and give them a light and fluffy texture. You can make your own bread crumbs by toasting bread and then grinding it in a food processor, or you can buy them from the store.
- Add some moisture: Eggs, milk, and water can all be used to add moisture to the meatballs. This will help to prevent them from becoming dry and tough.
- Season the meatballs well: Salt, pepper, garlic, and onion powder are all essential seasonings for meatballs. You can also add other herbs and spices to taste, such as oregano, basil, thyme, or rosemary.
- Brown the meatballs before simmering them: Browning the meatballs in a pan before simmering them in sauce will help to develop their flavor and prevent them from falling apart.
- Use a good quality sauce: The sauce is what really makes or breaks a meatball dish. Choose a sauce that is flavorful and has a good consistency. You can use a store-bought sauce or make your own.
- Serve the meatballs hot: Meatballs are best served hot, right out of the oven or pot. You can serve them on their own, with rice or pasta, or in a sandwich.
Conclusion:
Meatballs are a versatile and delicious dish that can be enjoyed in many different ways. With so many different recipes to choose from, you're sure to find one that you'll love. So next time you're looking for a quick and easy meal, give meatballs a try. You won't be disappointed!
