4 cups long-grain white rice

1/4 cup olive oil, plus more for finishing, optional

1 box frozen chopped spinach, defrosted and squeezed dry

Steps:

  • To make the rice: Heat the oil over medium-high heat in a large saucepan with a heavy bottom or small Dutch oven. Add the rice and the salt and stir to coat. When the rice starts to appear opaque and chalky, add enough cold water to cover the rice by the width of 2 fingers (about 1-inch). Bring to a rapid boil, and boil-without stirring!-until the water level reaches the level of the rice. Stir the rice once and reduce the heat to low. Cover and cook 20 minutes.
  • Meanwhile, make the spinach mix: Heat the olive oil in a large skillet over medium-low heat. Add the garlic, stirring so it doesn't stick, and cook until fragrant. Stir in the spinach and season with salt and pepper, to taste. Raise the heat to medium-high and cook until the spinach is just heated through. Don't overcook or the spinach will discolor.
  • Once the rice has finished cooking, fold the spinach into the pot. Fluff the rice so that the spinach is evenly distributed. Taste and season with additional salt and pepper if necessary. If you like, add a couple of drizzles of olive oil to give the rice a little gloss.

1/2 cup tightly packed fresh cilantro
1 cup tightly packed fresh spinach leaves
1-1/4 cups chicken stock
1-1/4 cups milk
1 tsp salt
1 Tbsp olive oil
3 Tbsp unsalted butter
1-1/2 cups long-grain rice
1/4 cup minced onion
1 jalapeno (seeds removed, minced)
2 cloves garlic (minced)
1 lime (quartered)

Steps:

  • To a blender or food processor, add cilantro, spinach, chicken stock, milk and salt. Puree until smooth and well combined. Set aside.
  • Add olive oil and butter to a large saucepan (with tight fitting lid), and heat over MED heat.
  • Add rice and stir. Saute rice, stirring often, until it starts to toast and turn golden brown. This will take about 3 minutes or so.
  • Add onion, jalapeno and garlic, and saute for an additional minute, stirring constantly.
  • Pour in pureed mixture, stirring to combine well.
  • Increase heat to HIGH to bring to a boil. Once it boils, reduce heat to LOW, cover with lid, and cook for 20 minutes.
  • Stir rice once, cover pan again and cook another 5 minutes.
  • Turn off the heat and let rice sit in the covered pot for 10 minutes.
  • Fluff with a fork and serve.
  • Squeeze a lime quarter over the rice right before eating for extra freshness!

1/2 cup tightly packed fresh cilantro stem (about 1/2 oz.)
1 cup tightly packed fresh stemmed spinach leaves (about 1 1/2 oz.)
1 1/4 cups chicken stock (low salt, please)
1 1/4 cups milk
1 teaspoon salt
1 tablespoon olive oil
3 tablespoons unsalted butter
1 1/2 cups long grain rice
1/4 cup finely minced onion
1 garlic clove, minced

Steps:

  • Put the cilantro, spinach and chicken stock in a blender and blend until finely pureed.
  • Add the milk and salt and blend just until everything is blended.
  • Set aside.
  • In a 3 qt saucepan with a good lid, heat the olive oil and butter.
  • When the butter is melted, add the rice and saute until it just begins to brown (3 minutes).

1 cup uncooked white rice ((we used basmati, but jasmine will also work))
1 Tbsp avocado oil
1/2 cup chopped white or yellow onion ((or sub shallot))
3 cloves garlic, skins removed and minced
1 healthy pinch sea salt
1 ¾ cup water ((or sub broth of choice for more flavor))
1 small jalapeño pepper, seeds and stems removed and chopped ((or green bell pepper for less spicy rice))
2 cups cilantro, large stems removed ((as recipe is written, about 1 large bundle))
1/2 tsp sea salt
1/4 tsp spirulina ((for added color // if you don't have it, omit))

Lime wedges

Steps:

  • Begin by rinsing the white rice in a fine mesh strainer until water runs clear. Set aside.
  • To a blender add water, pepper, cilantro, sea salt, and spirulina and blend on high for 30 seconds or until completely combined. Set aside.
  • Heat a large saucepan, dutch oven, or skillet (with a secure lid) over medium heat. Once hot, add avocado oil then onion and garlic and a healthy pinch of sea salt. Sauté until just tender - 3-4 minutes. Then add well-drained rice and begin toasting, stirring occasionally, for about 2-3 minutes.
  • Slowly add the green mix from the blender to the pan and stir to fully combine - it should just cover the rice. Increase heat to high until the mixture reaches a low boil. Then reduce heat to a simmer, cover, and set a timer for 18 minutes. DO NOT open the lid until the timer goes off. At that point, the rice should be fluffy and the liquid should be absorbed. Turn off the heat, leave the lid on, and let the rice rest for 10 minutes before removing lid so the moisture can redistribute - this will help prevent mushy rice.
  • Add lime juice or cilantro wedges as a garnish for serving. Rice is best when fresh, but will keep in the refrigerator up to 2-3 days. It is freezer-friendly up to 1 month.

2 cups long-grain white rice, rinsed
3 cups low-sodium chicken stock
Miss Brown's House Seasoning, recipe follows
1 tablespoon unsalted butter
1 large sweet onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 cup finely chopped collard greens
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Heat 2 tablespoons of the oil in a large pot over medium-high heat. Add the rice and cook, toasting until the rice begins to smell nutty, 2 to 3 minutes. Add the chicken stock and some House Seasoning. Bring it to a boil; cover, reduce the heat to low and cook until the rice is tender and has absorbed all the liquid, 20 to 25 minutes.
  • Meanwhile, heat the butter and remaining tablespoon oil in a large skillet over medium-high heat. Add the onion, pepper, garlic and a generous pinch of House Seasoning. Cook until just tender and beginning to brown, about 5 minutes. Add the collards and cook until softened, 6 to 8 minutes.
  • Once the rice is cooked and the liquid is absorbed, turn off the heat. Remove the lid and add the onions and collard green mixture. Fluff and stir gently with a fork to combine.

1 bunch swiss chard, stems finely chopped and leaves cut into 1-inch pieces
4 cups baby kale, chopped
1 avocado, pitted and sliced
1/2 English cucumber, peeled and julienned

  • Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon sesame oil to the pan and continue to heat for an additional minute. Add the scallion, ginger, garlic and 1/2 teaspoon salt to the pan. Cook, stirring often for about 2 minutes or until fragrant. Add the rice and toss to coat. 1 pound tomatillos, husked, washed, and cut into quarters

1/2 medium onion, cut in 1/2

6 ounces sharp cheddar cheese, shredded
1 cup ricotta cheese
1 cup sour cream
2 -3 cloves garlic, minced

1 (10 ounce) package frozen chopped spinach, thawed
1 medium bell pepper, seeded and chopped
1 (4 ounce) can chopped green chilies
4 green onions, chopped (white and some of the green)
