FAST AND CRUNCHY BAKED FISH
Steps:
- Preheat oven to 450. Move oven rack to middle position. Toss crumbs with 1 tablespoon of the dill. In a separate bowl, mix the remaining 1 tablespoon dill, the mayonnaise, mustard and lemon juice together. Pat the fish dry with paper towels, then season with salt and pepper. Butter a baking dish. Lay the fish in prepared dish, spacing the pieces about 1/2 inch apart. Brush the tops and sides of the fish with the mayonnaise mixture. Sprinkle and press the cracker crumbs into the mayonnaise. Bake until the crumbs are golden brown and the fish flakes apart when gently prodded with a paring knife about 15 minutes. Serve with the lemon wedges.
Tips:
- Choose the right fish: For baking, firm-fleshed fish like salmon, cod, halibut, or tilapia are best. Avoid delicate fish like sole or flounder, as they can easily overcook.
- Season generously: To infuse flavor into your fish, season it liberally with salt, pepper, and other spices or herbs. You can also use a marinade to add extra flavor.
- Use parchment paper or foil: Baking fish in parchment paper or foil helps to keep it moist and prevents it from sticking to the pan. Plus, it makes cleanup a breeze!
- Cook at a high temperature: Fish cooks quickly, so it's important to bake it at a high temperature (400-425°F) for a short period of time. This will help to keep the fish tender and juicy.
- Check for doneness: The best way to tell if fish is done baking is to insert a fork into the thickest part of the fish. If it flakes easily, it's done.
