275 g self raising flour
1 teaspoon mixed spice

  • Line a 9-inch cake tin. Cook at approximately 170°C for about an hour to an hour and a quarter.
  • To stop it drying out while cooling, it's advisable to drape a clean tea towel over the cake after about half an hour.
  • NB - if you are in a hurry for the fruit to cool - place saucepan in some cold water in the sink, iit will cool in under half the time.

Tips:

  • Mise en place: Before you start baking, measure and prepare all of your ingredients and equipment. This will help you stay organized and avoid any scrambling.
  • Use high-quality ingredients: The better the ingredients, the better your fruitcake will be. Look for fresh, ripe fruit and high-quality nuts. Store bought candied fruit can also be used, but shun candied fruit with artificial colors and flavors.
  • Don't overmix the batter: Overmixing can result in a tough, dense fruitcake. Mix the batter just until the ingredients are combined.
  • Bake the fruitcake at a low temperature: This will help to prevent the fruitcake from drying out. The ideal temperature is 275°F (135°C).
  • Wrap the fruitcake tightly in plastic wrap: This will help to keep the fruitcake moist. You can also store the fruitcake in an airtight container.

Conclusion:

Fruitcake is a classic holiday treat that can be enjoyed by people of all ages. With a little planning and effort, you can make a delicious fruitcake that will be the star of your holiday table. So, put on your apron and start baking!
