FAT RASCALS (POTATO CHEESE PUFFS)
This is an all-time favorite Saturday night snack at our house. I'd always made potato patties with any leftover mashed potatoes that I had, but when I came across Fat Rascals they sounded like a delicious variation. Now my family deliberately leaves some mashed potatoes in the bowl during dinner just so that I can make this treat the next day!

GRANDMA'S CHEESY POTATOES
My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. Garnish with chopped green onions or Italian parsley, and top with more cheese for a restaurant 'look.' I hope you enjoy this recipe as much as we do.

CRISPY CHEESY SMASHED POTATOES
I had a few ingredients and wanted to do something different with some baby red potatoes that I had. I love bacon, blue cheese, and green onions, so I threw them all together and this is what I came up with. The combination of the three together is absolutely fantastic!

GRAM'S CHEESY POTATOES
For my family, comfort food often comes in the form of a potato with gooey, cheesy goodness. No gathering or special occasion is the same without it. It's tradition in our family that once a recipe is bestowed upon you - you add one ingredient to make it yours. My grandmother added the paprika and passed this recipe on to my mom. My mom added the bacon and when mom passed it on to me, I added the green chilies. This one is a must-make for your next gathering. What will you add to make it yours? -Erin Puariea, Milwaukee, Wisconsin

Tips:
- For the best results, use Yukon Gold or russet potatoes. These varieties hold their shape well and become fluffy when cooked.
- Cut the potatoes into uniform pieces so that they cook evenly.
- Don't overcrowd the pan when cooking the potatoes. This will prevent them from cooking evenly.
- Season the potatoes with salt and pepper before cooking. This will help to enhance their flavor.
- Cook the potatoes until they are tender but still have a slight bite to them. This will prevent them from becoming mushy.
- Add the cheese and other toppings to the potatoes while they are still hot. This will help the cheese to melt and the flavors to blend together.
- Serve the potatoes immediately. They are best enjoyed hot and fresh.
