2 heads garlic, cut in 1/2 horizontally
Kosher salt
Freshly ground black pepper
Extra-virgin olive oil
2 whole fresh thyme sprigs, plus leaves from 6 sprigs
2 lemons, juiced, plus 2 lemons, halved
About 1 bunch flat-leaf parsley, leaves chopped
1 (4 to 4 1/2-pound) chicken, cut into 10 pieces
2 heads radicchio, preferably Treviso, cut into quarters
1 tablespoon balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F. Cut a piece of aluminium foil about 12 inches long.
  • Put the garlic on 1/2 of the foil, sprinkle with salt and pepper, drizzle in some olive oil, and add 2 sprigs of thyme. Fold the foil enclosing the garlic, making a pouch, and add a couple teaspoons of water. Fold the foil over the garlic to enclose and fold in the edges 2 or 3 times to seal. Put the package in the oven and roast for 30 minutes, or longer, until the garlic is soft. Open the package and let the garlic cool a bit, then squeeze out the cloves into a food processor or blender. Add 1/2 cup olive oil, the lemon juice, parsley, and thyme leaves and puree to make a thick vinaigrette.
  • Preheat an outdoor gas or charcoal grill to medium heat.
  • Rinse the chicken and pat dry with paper towels. Put the pieces in a bowl, sprinkle with salt and pepper, and drizzle with olive oil; toss to coat with the seasonings and then refrigerate while you get everything else together.
  • Put the radicchio in another bowl, drizzle with olive oil, balsamic vinegar. Sprinkle with salt and pepper and toss; set aside.
  • When you're ready to cook, take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface.
  • Season with salt and pepper and place the radicchio quarters on the preheated grill. Cook the radicchio for about 2 minutes per side until it has a nice char; pull it off the grill, place into a bowl, cover with plastic wrap, and set aside to steam and finish cooking.
  • Then put the chicken on the grill, skin side down, and grill. Grill the chicken for about 20 minutes, turning once, then baste with about half of the vinaigrette and keep cooking until an instant-read thermometer stuck into the thickest part of the thigh reads 160 degrees F and the chicken is nice and caramelised all over, 15 to 20 more minutes. During the last few minutes, throw the lemon halves on the grill, cut sides down, and cook until just marked and smoky.
  • To serve, separate the radicchio into individual leaves in a big bowl. Add the chicken and the rest of the dressing and toss well. Serve with grilled lemon halves, squeeze the lemon over the chicken, and top with reserved dressing.

2 (4-pound) chickens, cut into 8 pieces, backbone removed
1 bunch scallions, minced
6 garlic cloves, peeled and finely chopped
2 cups orange juice
1/4 cup cider vinegar
2 teaspoons dried oregano
2 teaspoons kosher salt
1 teaspoon crushed red pepper flakes
Serving suggestion: Grilled Summer Vegetables and Corn, recipe follows
2 eggplants, cut into 1/2-inch slices
2 zucchini, cut into 1/2-inch slices
1 red onion, cut into 1/2-inch slices
2 plum tomatoes, cut in 1/2, lengthwise
6 ears corn, shucked

Salt and pepper

Steps:

  • Place the chicken pieces in 1 or 2 large re-sealable plastic bags and add the rest of the ingredients. Seal the bag and shake to mix. Refrigerate at least 1 hour or overnight.
  • Heat grill to medium heat, or until the coals are lightly covered with ash. Oil the grill.
  • Cook the chicken, skin side up, for 20 minutes. Turn the pieces and cook an additional 15 to 20 minutes, or until a meat thermometer inserted reaches 155 degrees and the chicken is fork-tender and the juices run clear when a thigh is pricked with a fork. (It should measure 180 degrees F on an instant read thermometer). Alternately, roast the chicken in a preheated 400 degree F oven for 35 to 40 minutes.
  • Serve 1 bird hot and reserve the other for Days 2 and 3.
  • Brush the vegetables with olive oil and sprinkle with salt and pepper.
  • Place everything on the grill over medium heat and cook, turning frequently, for 10 to 15 minutes, or until fork tender. Serve hot, reserving 1/3 of the vegetables for Day 2 and two ears of corn for Day 3.

4 sprigs rosemary
2 heads of garlic, halved crosswise
2 bunches red scallions

Steps:

  • Prepare grill for medium heat. Season chicken with salt and pepper. Place rosemary, garlic, and 1 bunch of scallions in a layer on grill.
  • Place chicken, skin side up, on top of aromatics. Cover grill and cook until chicken is nearly cooked through, 35-40 minutes (aromatics will be thoroughly charred).

Saw a recipe which I used as a guide. Used breasts instead of pieces, increased the garlic & poached the chicken in the marinade first as my meat was very thick. Finished by browning the chicken for a more appetising appearance. YUM! Great for garlic lovers. Prep time does not include marinating time, as that can vary, depending on the time you have.

4 chicken breasts
8 cloves garlic, peeled
1/2 teaspoon salt
8 -10 black peppercorns, whole
2 lemons, juice of, about ¼ cup
parsley, one bunch,about ¼ cup
olive oil
butter, for frying (optional)

Steps:

  • Trim chicken as desired, cut a couple of diagonal slashes in each piece and set aside.
  • Add all other ingredients, except oil and butter to food processor and blend to a paste.
  • With motor running, drizzle in oil until the mixture is a pale green.
  • I used about ¼ cup, but this can vary to taste.
  • Cover the chicken with marinade and refrigerate for as long as possible, 3-24 hours.
  • Melt butter in pan (if using) and turn the heat down.
  • Place chicken breasts in pan with all the marinade and cover.
  • The meat I used was very thick, but if your chicken breasts are thinner it may be possible to skip this step and just fry or grill more quickly over a higher heat.
  • After about 10 minutes the steam has helped cooked through the chicken.
  • Remove lid, increase heat (med-high) and brown chicken on both sides.
  • I served this with a side of steamed spinach and “Felicity’s Stuffed Red Peppers”, also here on ‘Zaar.
  • I had some leftovers, cold for lunch, and they were delicious, the garlic flavour had intensified& the meat was moist.

2 small whole heads garlic, separated into cloves and peeled
1/4 cup chopped Italian parsley leaves
Salt and freshly ground white pepper to taste
2 2-pound chickens, halved and with all but the wings boned
2 tablespoons unsalted butter
3 tablespoons fresh lemon juice

Steps:

  • Preheat a gas, charcoal or electric grill until moderately hot. Bring a small saucepan of water to a boil, add garlic and boil 1 minute. Drain. Cut garlic into paper-thin slices and toss in a small bowl with the parsley and a little salt and pepper.
  • Stuff about 1 teaspoon of the garlic mixture under the skin of each chicken half, in breast and thigh areas. Put chickens on a plate, cover with plastic wrap and refrigerate until ready to use. Reserve remaining garlic mixture.
  • When ready to cook, grill chicken halves 7 to 10 minutes on each side, until they are just cooked through. Make sure all pinkness disappears but do not overcook.
  • Meanwhile, melt the butter in a saute pan. Add remaining garlic mixture and saute gently until barely golden. Remove from heat. Add lemon juice and season to taste with salt and pepper.
  • Put a chicken half on each of 4 warmed plates and spoon the sauteed garlic mixture over each. Serve at once.

There are lots of recipes for stuffed peppers, this is mine. I served these with my Garlicky Grilled Chicken. If you wanted to serve them as a main course, you could decrease the rice & use more meat in the filling. You could also use lamb or beef as a change from chicken. I have suggested using spices to taste, because you can vary it depending on your mood or the theme of your meal. I used oregano, but you could use harissa or cumin for a middle eastern flavor or chilli for some heat... it's up to you to make my dish yours :-) Enjoy!

4 red capsicums (bell peppers)
2 cups cooked rice
1 large onion
2 stalks celery
1 medium carrot
2 garlic cloves
180 g ground chicken, cooked and crumbled
1/2 cup mozzarella cheese, grated, plus extra for topping
salt and pepper
other spices (refer to notes above)
1 tablespoon butter (optional)

Steps:

  • Cut the top off the peppers and remove the insides.
  • Chop onion, carrot, celery and garlic very finely.
  • (I use a food processor) Cook vegetables in butter until soft.
  • Combine vegetables, rice, chicken and cheese.
  • Season to taste.
  • Fill peppers with this mixture, pressing down as you go to ensure they are well stuffed.
  • Place peppers in a covered casserole and cook in a 180c oven until peppers are soft, approximately 60-90minutes.
  • To speed the cooking process, microwave the peppers for a couple of minutes before filling.
  • Once they are soft, sprinkle with additional cheese and broil until tops are golden.
  • Serve hot or warm as a side dish, appetiser or light lunch.
