Handed down from my mother. This is a great salad for onion lovers and even those who don't care much for onions. I always get requests for this recipe. I prefer served at room temperature, but it holds well in the fridge a couple of days. Goes with any meal.

½ cup white vinegar
½ cup water
¾ cup white sugar
6 Spanish onions, thinly sliced
¾ cup mayonnaise
1 tablespoon celery seed
salt and ground black pepper to taste

Steps:

  • Combine vinegar and water in a large bowl. Whisk sugar into the vinegar mixture until dissolved. Add onion slices and marinate at least 3 hours; drain.

4 cups sliced onion
5 tablespoons butter
1 cup cream
salt to taste
ground black pepper to taste
⅔ cup Parmesan cheese
2 eggs

Steps:

  • Saute onions in butter or margarine until transparent. Place in 2-quart baking dish.
  • In a small bowl, beat eggs well. Stir in cream, and season with salt and pepper. Pour mixture over onions, and sprinkle cheese.
  • Bake, uncovered, at 425 degrees F (220 degrees C) for 15 to 20 minutes.

1 small onion, chopped
2 to 3 jalapeno peppers, seeded and chopped

1 yellow pepper, diced
1 red pepper, diced
1 orange bell pepper, diced
1/2 white onion, diced
3 medium tomatoes, diced
1 (19 ounce) can black beans, drained and rinsed
1 (7 ounce) can corn
1 teaspoon cumin (or to taste)
1 pinch chili pepper (or to taste)
1 pinch paprika (or to taste)
salt & pepper
1 lime, juice of

Steps:

  • In a large non stick skillet sauté onions until they soften. Add peppers and seasonings and sauté until peppers are almost tender. Add tomatoes, beans, corn and lime juice. Cover and let simmer until tomatoes are soft but not mushy.
