2 tablespoons unsalted butter
2 sprigs fresh rosemary
1 clove garlic

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

4 filet mignon steaks
1/2 teaspoon salt, divided
1/2 teaspoon fresh ground pepper, divided
1/4 cup minced shallot
1 tablespoon red wine vinegar
2 teaspoons low sodium soy sauce
1 cup cabernet sauvignon wine
1 cup reduced-sodium beef broth
2 teaspoons butter

Steps:

  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Sprinkle both sides of steaks evenly with 14 teaspoon pepper.
  • Add steaks to pan; cook 3 minutes on each side or until desired degree of doneness. Remove from pan.
  • Add shallots to pan; saute 1 minute. Stir in vinegar and soy sauce, scraping pan to loosen browned bits; cook 1 minute or until liquid evaporates, stirring constantly.
  • Add remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, wine and broth; bring to a boil. Cook until reduced to 1/2 cup (about 11 minutes). Remove from heat; stir in butter. Serve with steaks.

Tips:

  • To achieve a perfectly cooked filet mignon, use a meat thermometer to ensure it reaches an internal temperature of 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
  • When searing the filet mignon, make sure the pan is very hot before adding the meat. This will help create a nice crust and prevent the meat from sticking.
  • Let the filet mignon rest for a few minutes after cooking before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • For the rajas con crema, use fresh poblano peppers for the best flavor. If you can't find poblano peppers, you can substitute bell peppers.
  • Be sure to cook the rajas con crema until the peppers are soft and the sauce has thickened.

Conclusion:

Filet mignon with rajas con crema is a delicious and easy-to-make dish that is perfect for a special occasion or a romantic dinner. The tender filet mignon is cooked to perfection and topped with a creamy and flavorful poblano pepper sauce. This dish is sure to impress your guests and leave them wanting more.
