Steps:

  • To prepare the stuffing: In a medium saute pan melt the butter over medium heat and add the onion. Sauté about 2 minutes or until translucent. Add the roe and sauté, stirring constantly, until the roe begins to change color but still remains pink. Stir in the eggs, breadcrumbs, chervil, tarragon, and salt, and remove to a plate to cool. To prepare the fish: Preheat the oven to 425 F. In a small bowl combine the oil, wine, garlic, black pepper, chervil, and tarragon. Set aside. Divide and stuff the roe stuffing mixture between the flaps of the shad fillets. Be careful not to cover the flesh with the stuffing as the fish will not cook evenly. Spread the butter on a non-reactive baking pan and place the stuffed fish fillets on the pan. Spoon the marinade over the fillets, and top each with a lemon slice. Tent the pan with aluminum foil, and tightly close on all four sides so that no steam escapes during the roasting. Roast for 20 minutes until cooked through. Serve immediately.

6 rectangular portions of boneless shad fillets with skin left on, about 36 ounces total weight
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons olive oil
1/4 cup dry white wine
2 tablespoons plus 1/4 cup finely chopped fresh chervil (or use a blend of parsley and tarragon)
2 pairs shad roe, about 3/4 pound total weight
6 tablespoons unsalted butter
1/2 cup finely chopped onion
1 cup finely diced whole-wheat bread
2 hard-cooked eggs, put through a sieve, about 1/2 cup
6 rectangles of parchment or aluminum foil measuring about 12-by-16 inches
6 thin seedless lemon slices with rind left on

Steps:

  • Preheat the oven to 475 degrees.
  • Arrange the shad fillets, skin-side-down, in a baking dish, preferably rectangular or square, in which the portions will fit snugly in one layer. Sprinkle with salt and pepper.
  • Bend the oil, wine and 2 tablespoons of chervil. Sprinkle this over the fish.
  • Pull off and discard the connecting membranes of the roe. Cut the roe crosswise into 1/2-inch-thick slices.
  • Heat the butter in a small skillet, and add the onion. Cook, stirring, until wilted but not browned. Add the pieces of roe, and cook, stirring briefly, just until the roe starts to lose its raw look.
  • Put the bread cubes in a mixing bowl, and add the remaining 1/4 cup of chopped chervil. Add the roe mixture and the sieved eggs. Blend well. Divide the mixture into 6 equal portions.
  • Lay out the 6 rectangles of parchment, and place 1 piece of fillet, skin-side-down, on each piece of paper. Spoon an equal portion of the oil and wine marinade over each. Open up the flaps (from which the bones were removed), and stuff each opening with equal portions of the roe mixture. Pack it loosely. Top each serving with a lemon slice. Fold the parchment neatly, envelope-fashion, sealing the edges. Arrange each filled envelope, sealed-side-down, on a baking sheet.
  • Place in the oven, and bake 13 minutes. To serve, remove the fish from the envelopes and serve.

40 -50 leaves swiss chard leaves
1 cup rice, washed & drained
1/2 cup chickpeas
1/2 cup vegetable oil
1 1/2 teaspoons salt
1/4 teaspoon pepper
6 green onions
1 cup lemon juice
2 tablespoons dry mint
3/4 cup parsley, finely chopped
water

Steps:

  • Using fresh Swiss Chard, place leaves in hot water for 10 minutes to soften for rolling (if the leaves are too large cut in half).
  • Remove the ribs from the leaf.
  • Set leaves aside.
  • Drain chick peas.
  • Combine the skinned chick peas, half of the lemon juice, and all other ingredients except Swiss Chard and water.
  • Mix well.
  • Place a tablespoon of the filling lengthwise on a leaf bringing the edges about 1/2 inch toward the centre and rolling as fingers.
  • Arrange in saucepan, alternating the direction of each layer.
  • Add the other 1/2 cup lemon juice and enought water to reach just below the level of the last row.
  • Bring to boil, then cover and simmer for 45-60 minutes .
  • All water should have evaporated.
  • If not, remove lid and simmer for a further 10 minutes.
  • Place a plate over top of the pan and holding plate and pot securly together, turn upsidedown so all the rolls remain in the same mold on the plate as the pan.
  • Serve with yogurt.

2 shad fillets with skin on
Juice of 1 lemon
1 pound of Swiss chard
1 tablespoon unsalted butter
1 tablespoon olive oil
2 shallots, minced
Coarse salt and freshly ground pepper to taste
1 tablespoon peanut or vegetable oil
Lemon quarters for garnish

Steps:

  • Put the fillets of shad on a plate and squeeze the lemon juice over the flesh. Remove the stems from the Swiss chard and carefully wash the leaves in several changes of water. Drain and chop.
  • Melt the butter in a frying pan with the olive oil and soften the shallots. Add the chard and cook it until it is wilted. Season with salt and pepper and set aside.
  • Preheat broiler. Take a piece of foil twice the width of the shad fillet and put the shad skin down on one side of the foil so later you can turn the fillet over onto the other side of the foil. Place the Swiss chard in the middle of the fillet and close the overhanging flaps of flesh over it. Flip the fish over on the foil so it is now skin side up. Sprinkle with the peanut oil.
  • Broil the shad until the skin is crisp (about five minutes). Using the foil as a lever, turn the fish over. Broil until done, about three to four minutes and serve with the lemon wedges.

1 tablespoon dried currants
4 teaspoons rice
1 medium onion
8 tablespoons olive oil
1 bunch leafy Swiss chard with large leaves (about 12 pieces)
1 tablespoon flour
1 tablespoon coarse salt
1 tablespoon pine nuts
Salt and freshly ground pepper to taste

Steps:

  • Set the currants in a little warm water for 10 minutes, then drain. Parboil the rice in salted water for 12 minutes, then drain it in a strainer and cool under cold running water.
  • Peel the onion and chop it fine; saute it for a minute in a skillet in one tablespoon of the olive oil.
  • Wash and dry the chard, making sure not to damage the green leaves. Run a knife along the stalks, separating the green from the white. Cut the stalks into two-inch lengths.
  • Put the flour and the tablespoon of coarse salt in three quarts of water. Bring to a boil and add the chard stalks. Cook them 10 to 15 minutes or until just tender, then drain well and chop coarsely with a knife.
  • Heat four tablespoons of olive oil in a skillet over medium heat. Add the boiled chard stalks and saute them, stirring often, for five minute. Preheat the oven to 275 degrees.
  • Put the sauteed stalks into a bowl and add the currants, pine nuts, parboiled rice, chopped onion and salt and pepper to taste. Form the stuffing into little balls, about a tablespoon of stuffing each, and rap each ball neatly in a Swiss chard leaf.
  • Arrange the balls tightly in a baking dish, smooth side up. Sprinkle with the remaining three tablespoons of oil, add about one-fourth-inch water and bake about 35 minutes. Serve hot in the baking dish.

½ teaspoon kosher salt
½ lime

Steps:

  • Chop the chard stems into 1/2-inch pieces. Stack the chard leaves, roll them tightly into a cylinder, and chop into 1/2-inch strips; chop the strips into halves.
  • Heat about half the olive oil in a large non-stick skillet over medium heat. Cook chopped chard stems in hot oil until hot, about 1 minute. Stir the chard leaves with the stems; cook and stir together 1 minutes more. Drizzle remaining olive oil over the mixture and stir to coat.   • Preheat oven to 375 degrees.
  • In 2 tablespoons of butter, saute the onion and 1 teaspoon of garlic until transparent. Stir in 2 tablespoons of wine. Add the spinach, cover and cook over low heat for 5 minutes. Stir in the cream cheese, mozzarella and Monterey Jack. Add another teaspoon of garlic. Season with salt and pepper.
  • In a small bowl, combine the bread crumbs, pecorino, parsley and remaining garlic.

Coarse salt
3 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 small leeks, white and pale-green parts only, trimmed, finely chopped, and well washed
6 medium scallions, white and pale-green parts only, thinly sliced crosswise

6 tablespoons pine nuts, toasted
3 cups cooked short-grain brown rice

Fresh Tomato Sauce for Stuffed Swiss Chard

Steps:

  • Preheat oven to 400 degrees. Choose 12 large chard leaves (each should be about 10 inches long and 5 inches wide) or 24 smaller leaves; set aside. Coarsely chop enough of the remaining leaves to make 4 1/2 cups; reserve remaining leaves for another use. Bring a large pot of water to a boil; add a pinch of salt. Blanch whole leaves, 1 at a time, until tender and bright green, about 5 seconds. Lay flat on a baking sheet lined with paper towels to drain.
  • Melt butter with oil in a medium skillet over medium heat. Add leeks, scallions, 2 teaspoons salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until translucent, about 3 minutes. Add chopped chard, and cook, stirring occasionally, until chard has wilted, about 3 minutes more. Transfer to a medium bowl, and add pine nuts; let stand until cool.   • Place a blanched leaf facedown on a work surface. Cut out thickest part of stalk, about one-third of the way up leaf; slightly overlap the cut ends. If using smaller leaves, overlap 2 leaves so they are about 10 by 5 inches. Spoon 1/3 cup filling about one-third of the way up leaf. Fold bottom of leaf over mixture. Fold in sides. Roll to enclose filling completely, creating a 3-by-2-inch bundle. Repeat with remaining leaves and filling.
  • Transfer to a 9-by-13-inch baking dish. Tent with foil. Bake until heated through, about 15 minutes. Spoon warm sauce onto plates; serve 2 or 3 bundles per plate.

3 tablespoons extra virgin olive oil
4 ounces meaty bacon, minced (optional)
1 medium onion, minced
4 garlic cloves
1 bunch swiss chard, stems minced and leaves torn and reserved
32 ounces prepared tomato sauce (I used arrabiata)
1 teaspoon dried basil
1 pinch crushed red pepper flakes
1 pinch kosher salt
1 pinch fresh ground pepper
8 large eggs
3 tablespoons grated parmesan cheese
1/4 cup thinly sliced basil leaves (optional)

Steps:

  • 1. Preheat oven to 350-degrees. In a large oven-proof skillet (I used cast-iron), heat the olive oil. Add the bacon, if using, and onion garlic and chard stems and cook over moderate heat, stirring occasionally, until the stems are softened, about 5 minutes. Add the tomato sauce, dried basil and crushed red pepper and simmer until the sauce is thickened, about 15 minutes. Season with salt and pepper.
  • 2. Meanwhile, in a large pot of salted boiling water, blanch the chard leaves for 3 minutes. Drain and let cook slightly. Squeeze out the excess water. Form the chard leaves into 8 small piles and arrange them in the sauce around the side of the skillet. (I blanched and dried the chard in advance to make things easier--it'll keep for at least 30mins/1 hr).
  • 3. Crack the eggs into the skillet between the piles of chard. Transfer the pan to the oven and bake the eggs for 12 to 15 minutes, until the egg whites are just set and the yolks are slightly runny.
  • 4. Transfer the skillet to a rack and sprinkle the cheese on top. Let stand for 5 minutes. Garnish with basil and serve immediately.
  • Note: I served with crusty bread which was great for dipping and making sure no sauce went to waste! You can use plain marinara but the arrabiata gave this a nice little kick--highly recommend it. I made without bacon and didn't miss it.
