SWEET MACARONI SALAD

Sweet Macaroni Salad image

A sweet out-of-the-ordinary dressing makes this macaroni salad special. My aunt gave me the recipe and it has become one of my favorites. I occasionally leave out the green pepper if I know that people don't like it, and it still tastes great. -Idalee Scholz, Cocoa Beach, Florida

FIRECRACKER COLESLAW

Firecracker Coleslaw image

This is a great tasting and great looking slaw, which is a modification of a good but ordinary red slaw recipe. I decided to make it as bright and flashy as the multicolor impatiens in my garden, so I chose ingredients that have flashy colors.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 11

1 head red cabbage, shredded
1 red bell pepper, cut in thin strips
1 small red onion, cut in thin strips
1 carrot, grated using the large hole of a grater
5 green onions, cut in one inch lengths
1 tablespoon chopped Italian parsley
1 teaspoon thyme
3/4 cup rice vinegar
3 tablespoons sugar
1 teaspoon dry mustard
1 teaspoon grated fresh ginger or 1 teaspoon dried ginger

Steps:

  • Mix all of the slaw ingredients together in a large salad bowl.
  • Mix the dressing ingredients together.
  • Pour the dressing over the slaw and toss.
  • Refrigerate slaw for two hours to allow the flavors to blend.

Tips:

  • Choose the right cabbage: Green cabbage is the traditional choice for coleslaw, but you can also use red cabbage or a mix of both. Just be sure to shred the cabbage finely so that it's easy to eat.
  • Use a sharp knife or mandoline: This will help you get thin, even slices of cabbage and vegetables.
  • Don't overdress the coleslaw: You want the dressing to coat the cabbage and vegetables, but you don't want it to be soggy. A good rule of thumb is to use about 1/2 cup of dressing for every head of cabbage.
  • Let the coleslaw chill before serving: This will allow the flavors to meld and the cabbage to soften slightly.
  • Garnish the coleslaw with fresh herbs or vegetables: This will add a pop of color and flavor.

Conclusion:

Firecracker coleslaw is a delicious and refreshing side dish that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy side dish, give firecracker coleslaw a try!
