FISH FLORENTINE
Florentine is just the expression given to a dish paired with spinach, so you can have steak Florentine or chicken. I have listed this as fish Florentine rather than stating a particular kind, as I usually make this with sole, but I have made it with cod, and this time I made it with perch. The sauce I think works well with most kinds of firm white fish so take your pick and make your favourite.

Tips:
- Choose the right fish: Try to find a firm, flaky fish like sole, tilapia, or cod. These fish will hold up well in the sauce and won't fall apart.
- Use fresh spinach: Fresh spinach has a more vibrant flavor and color than frozen spinach. If you can't find fresh spinach, you can use frozen spinach that has been thawed and squeezed dry.
- Don't overcook the fish: Fish cooks quickly, so it's important not to overcook it. Otherwise, it will become tough and dry.
- Serve immediately: Fish Florentine is best served immediately after it's made. The sauce will start to thicken and the fish will get cold if you let it sit for too long.
Conclusion:
Fish Florentine is a classic dish that is both delicious and elegant. It's perfect for a special occasion or a weeknight meal. With its combination of tender fish, creamy sauce, and fresh spinach, Fish Florentine is sure to please everyone at the table.
