CINNAMON FLAX MUFFINS

Cinnamon Flax Muffins image

Another Atkins friendly flax recipe from the Atkins site, which I find easy to do, as I hate baking! If you're not low-carbing the flax is still very good for you so you could give them a try. I love them with butter or cream cheese. They taste like bran muffins to me. Not too sweet either.

Tips:

  • Use ripe bananas: Overripe bananas are sweeter and have a more intense flavor, making them perfect for muffins.
  • Don't overmix the batter: Overmixing can result in tough, dense muffins. Mix just until the ingredients are combined.
  • Fill the muffin cups evenly: This will help ensure that the muffins bake evenly.
  • Bake the muffins until a toothpick inserted into the center comes out clean: Overbaking can result in dry, crumbly muffins.
  • Let the muffins cool completely before frosting: This will help prevent the frosting from melting.

Conclusion:

These flax meal cinnamon muffins are a delicious and healthy snack or breakfast option. They are packed with fiber, protein, and healthy fats, and they are naturally sweetened with honey and maple syrup. The muffins are also easy to make and can be customized to your liking. Try adding different spices, such as nutmeg or ginger, or top the muffins with your favorite nuts or seeds.
