BLACKBERRY SPINACH SALAD
This is an excellent brunch salad that's very easy to throw together. This tastes great without a dressing, but some people like a bacon dressing or a nice balsamic vinegar.

BERRY SPINACH SALAD WITH TOASTED HAZELNUTS
If you love sweet and salty paired in one dish, then this nourishing salad is for you. To take this dish on the road, pack the berries and the dressing separately to avoid wilting the greens. For a cocktail party, swap the greens out for lettuce cups and spoon them full of the carrots, radishes, berries, and nuts, then drizzle with dressing.

Steps:
- Preheat the oven or toaster oven to 350°F.
- Spread out the hazelnuts in a single layer on a rimmed baking sheet. Toast in the oven until the skins split and the nuts turn a deep golden brown, 10 to 12 minutes. While still hot, rub the hazelnuts in a clean kitchen towel to remove the skins (some bits of skin will remain). Cool for 5 minutes, then chop.
- Combine the oil, lemon zest and lemon juice, kefir, honey, salt, and pepper in a small bowl and whisk until smooth. Divide the salad greens among four plates. Top with the carrots, radishes, and berries and drizzle with the dressing. Garnish with the chopped hazelnuts and serve immediately.
Tips:
- Prep Your Berries: Before you start, rinse and dry your berries to avoid diluting the dressing with excess water.
- Choose Fresh, Crisp Spinach: The foundation of this salad is fresh, crisp spinach. Look for spinach leaves that are dark green and not wilted.
- Homemade Dressing: Elevate the salad with a tangy homemade dressing made from olive oil, lemon juice, honey, and poppy seeds.
- Toasted Nuts for Texture: Add a layer of texture and nutty flavor with toasted walnuts or pecans.
- Cheese Crumbles for Richness: For an extra touch of richness, sprinkle feta or goat cheese crumbles over the salad.
- Serve Immediately: This salad is best enjoyed immediately after assembly to maintain the vibrancy of the berries and the crispness of the spinach.
Conclusion:
This Four-Berry Spinach Salad is not just a meal; it's an experience for your taste buds. With the burst of sweetness from the berries, the tangy-sweet dressing, the crunch of the toasted nuts, and the richness of the cheese crumbles, every bite takes you on a delightful journey.
