TRADITIONAL FRENCH PISTOLETS - LITTLE ONION AND RYE BREAD ROLLS

Traditional French Pistolets - Little Onion and Rye Bread Rolls image

These lovely little dinner or breakfast rolls are found everywhere in Belgium, and in most parts of France too. The last time I had them was a cosy Bed and Breakfast in Bruges, where they were served warm with fresh butter and boiled eggs for breakfast. They can vary in what type of flour is used, but they must always have the distinctive split, due to them being cut with the handle of a wooden spoon before baking. They are crusty and yet light inside, and make great sandwiches for picnics or a light lunch. This recipe is the result of numerous trial and error baking sessions, and the pistolets bread rolls are nutty and full of onion flavour. I start these off in the bread machine for ease when I am pushed for time, but they are just as easily made the more traditional way, mixing and proving by hand. NB: As one reviewer found out, baking can be a challenge, and in most cases an exact science. Do try to stick to the recipe as written - you won't be disappointed! Thanks!

Provided by French Tart

Categories     Yeast Breads

Time 2h

Yield 12 Pistolets

Number Of Ingredients 10

310 ml tepid water
20 g fresh yeast, crumbled
2 tablespoons olive oil or 2 tablespoons melted butter
1 teaspoon salt
1 teaspoon sugar
400 g strong white bread flour (high gluten)
100 g rye flour
2 -3 tablespoons dried onion
water, and onion salt or onion powder, for finish
flour, for dusting

Steps:

  • To start the dough in the bread machine, add the ingredients in the order posted - except the topping and extra flour for dusting. Put on "dough" setting to mix, prove and rise.
  • Pre-heat the oven to 220C/425F/Gas mark 7.
  • Once the dough has risen, turn out of the tin on to a floured board and knock back, then knead for a minute or two. Cut into 12 pieces and shape into ovals. Place on well greased and floured baking sheets and cover with oiled cling-film; leave them in a warm place to rise for 30 minutes, or until almost doubled in size.
  • Brush the rolls with water and then sprinkle with onion salt or normal salt, before dusting with flour. Using an oiled handle of a wooden spoon, split each roll almost in half lengthways, see photo. Allow to rest for 3 to 5 minutes before baking in pre-heated oven for 15 to 20 minutes. The pistolets should sound hollow when tapped and have a crusty finish. Allow them to cool slightly on a wire rack then serve warm with butter and fillings to taste. These freeze very well.

FRENCH HOAGIE ROLLS

French Hoagie Rolls image

This is basically a standard French bread loaf recipe scaled up and modified for 4 hoagies, with my own observations and tips regarding making them suitable for eating sandwiches. The key point is that biting through the crust of a roll into a sandwich requires a crust that isn't tough.

Provided by Jeff 631750

Categories     Yeast Breads

Time 2h

Yield 4 hoagie rolls, 4 serving(s)

Number Of Ingredients 5

1 1/2 teaspoons yeast
1 cup water
3 1/4 cups bread flour
1 1/2 tablespoons extra virgin olive oil
1 1/2 teaspoons salt

Steps:

  • Combine yeast with tepid but not warm water and let sit until convinced the yeast isn't dead, 10 minutes maximum.
  • In a large bowl, combine most of the flour, oil and salt, add the water/yeast, and stir/add flour until the ball pulls away from the bowl.
  • Sprinkle flour over a kneading surface and over the ball, and knead for about 7 minutes.
  • Lightly oil a bowl and allow to rise until doubled, usually about 50-60 minutes if in a barely warm place.
  • Punch down the dough, divide into quarters, and shape into 4 hoagies roughly 6" x 3.5" or so. Allow to rise for 20 minutes.
  • Preheat the oven at 425, with a baking stone in the center rack and a ceramic dish on the bottom while the bread rises.
  • Transfer the rolls to the stone, return the stone to the center rack, and turn the heat down to 375.
  • For each of the first 4 minutes baking, toss a dash of water across the bottom of the ceramic dish to create steam.
  • The rolls should be medium brown and more than doubled in height within 29-30 minutes.

FRENCH BREAD / PIZZA CRUST / SANDWICH ROLLS

French Bread / Pizza Crust / Sandwich Rolls image

This is my most favorite recipe and I thought that I had lost it through moving, and relocating. Instead of making a batch of cinnamon rolls you can take a single serving made from the loaf cooked in this recipe; toast or slightly heat 20 sec. in microwave, spread with butter, sprinkle on cinnamon and the slightest amount of...

Categories     Other Breads

Time 1h

Number Of Ingredients 9

1 1/2 c warm water - not hot
1 tsp salt
1 Tbsp sugar
1 Tbsp butter
3 1/2 c all purpose flour
1 pkg active dry yeast
CORN STARCH GLAZE
1/2 c cold water
1 tsp cornstarch

Steps:

  • 1. Preheat oven 375° Bake Time: approximately 20 minutes. My oven cooks hot and yours may need more or less cooking time.
  • 2. Combine the warm water, butter, salt, and sugar. Using water that is very warm will slowly melt the butter while combining. Sprinkle the yeast on top of your liquids mixture. (I own a Kitchen Aid and attach the dough hook and the batter guard.) Add your flour - I add all at once due to running my dough hook on low. Otherwise stir in the flour until it is a slightly sticky ball and knead. (With the Kitchen Aid run the dough hook adding flour until the batter no longer sticks to the bottom of the mixing bowl.)
  • 3. I usually knead the dough around 5 minutes. Well-kneaded dough should feel smooth and elastic. Press your fingertip into the dough; it should spring back. Butter a bowl, turning the dough to completely cover. Cover with a clean towel and let rise until doubled.
  • 4. Once dough is doubled remove and place on a slightly floured board. Knead in flour to feed it one more time before baking. Roll it into a a 12x15 rectangle after working additional flour into the dough.
  • 5. FRENCH BREAD: Roll up from long side and pinch the final seam together. Place seam side down on greased and cornmeal dusted baking sheet or use the Silicone Baking Mats. Cover with a clean towel or plastic wrap and let rise 45 minutes.
  • 6. SANDWICH ROLLS/BAGUETTES: Cut the rolled out dough into squares appropriate to your needs. Place on a greased baking sheet, cover with plastic wrap or a clean towel and let rise 45 minutes.
  • 7. CORNSTARCH GLAZE: NOTE: This is a typical mixture that professional bakers use to get that characteristic sheen on breads. I keep this mixture in my refrigerator to use on all the breads I bake. Save any glaze leftovers. 1/2 cup cold water 1 teaspoon cornstarch In a small saucepan, with a small whisk, stir together water and cornstarch. Heat mixture to a gentle boil. Stir, reduce heat, until mixture thickens and is translucent. Cool. Brush on loaf about 10 minutes before baking is finished and again 3 minutes before bread is completely done.
  • 8. When the bread is cooked, remove from oven and place the bread on a wire cooling rack to cool. Let baked loaf cool for 30 minutes before cutting (this is because the bread is still cooking while it is cooling). Makes 1 large loaf, 12 sandwich rolls, or 16 inch pizza crust.

FRENCH ROLLS

These delicious rolls are simply small, rounded baguettes. They convey a more formal air than a baguette, making them ideal for entertaining.

Yield Makes 16

Number Of Ingredients 3

French Dough
All-purpose flour, for dusting
Vegetable-oil cooking spray

Steps:

  • Working with 1 portion of dough at a time, keeping remaining dough covered, fold dough in half lengthwise to form a tight, narrow log. Gently press edges with lightly floured fingertips to seal. Using a dough scraper or a knife, cut into 8 pieces.
  • Gather edges, and gently pull and tuck them underneath the dough to create a round shape, pinching to seal.
  • Place dough on the work surface. Cup one hand around dough, and rotate it in circles until a smooth, taut ball forms.
  • Place rolls on a generously floured linen towel or a parchment-lined baking sheet. Cover loosely with oiled plastic wrap, and let rise at cool room temperature until rolls have almost doubled anda floured finger pressed into side leaves a slight indentation, 30 to 40 minutes.
  • Place a skillet on oven rack adjusted to lowest position and a baking stone on middle oven rack. Preheat oven to 500 degrees. If using a linen towel, gently transfer rolls to a parchment-lined baking sheet. Just before baking, use a lame or a razor blade to slash the surface of each roll, forming an X. Pour 1/2 cup hot water into skillet in oven. Slide rolls and parchment onto baking stone.
  • Immediately reduce oven to 450 degrees. Bake until rolls are deep golden brown, sound hollow when bottoms are thumped, and interiors register 205 degrees on an instant-read thermometer, 35 to 40 minutes. Let cool on racks.

BOULOU ( SWEET FRENCH TUNISIAN ROLLS)

Boulou ( Sweet French Tunisian Rolls) image

These rolls are traditional in French Tunisia. You can make this by hand but a stand mixer will do a fine and much easier job. Much of the prep time is rising time.

Provided by Chef Kate

Categories     Yeast Breads

Time 3h25m

Yield 12-14 rolls

Number Of Ingredients 18

2 1/2 teaspoons active dry yeast (or 1 teaspoon instant yeast)
1 cup sugar, divided
1 teaspoon sugar, divided
1 cup warm water, divided
2 large eggs, divided
1 egg yolk
1/3 cup oil
1 1/2 tablespoons rose water (or orange flower water)
1 1/2 teaspoons vanilla extract
1 teaspoon salt
5 1/4 cups unbleached flour, divided (22.3 ounces)
1 cup sugar
1 tablespoon fennel seed
4 tablespoons sesame seeds, divided
3/4-1 cup golden raisin
1 orange, grated rind of
1 tablespoon honey
1 1/2 teaspoons nigella seeds or 1 1/2 teaspoons black sesame seeds

Steps:

  • In a small bowl, stir together the yeast, 1 teaspoon sugar and one-fourth cup warm water. Set aside until the yeast begins to foam, 5 to 10 minutes.
  • In a medium bowl, whisk together the 2 eggs, oil, rosewater or orange flower water, vanilla, remaining three-fourths cup warm water and salt.
  • In the bowl of a stand electric mixer fitted with a dough hook, place 41/2 cups (19.1 ounces) flour, sugar, fennel seeds, 3 tablespoons sesame seeds, raisins and grated peel. Mix briefly to combine. Make a well in the middle and add the yeast and egg mixtures. Mix on medium-low speed, adding the remaining flour as necessary, and mixing until the dough leaves the sides of the bowl. Stop occasionally to scrape the sides of the bowl with a rubber spatula. The dough should still be slightly sticky. (The dough can also be mixed by hand; combine the ingredients and mix as listed above until the dough comes together, then knead; the dough will require additional kneading time.).
  • Transfer the dough to a lightly floured work surface and knead 5 minutes; the dough will be ready when it springs back quickly when poked. Place the dough in an oiled bowl, cover and set aside in a warm place until doubled in size, about 11/2 hours.
  • While the dough is rising, heat the oven to 350 degrees. Line a baking sheet with a silpat or parchment paper. Punch down the dough and set aside for 5 minutes to rest. Divide the dough into 12 to 14 pieces, and roll each piece between the palms of the hand into smooth ovals about 3 inches long. Place the ovals onto the lined sheet leaving 11/2 to 2 inches between each (if your baking sheet is small, you may need to use 2).
  • In a small bowl, whisk together the remaining egg yolk with the honey, and brush this over each of the ovals. Sprinkle over the remaining sesame seeds and nigella (or black sesame seeds). Cover the ovals loosely with a piece of plastic wrap and set aside for 15 to 20 minutes to rise, then bake until golden-brown, about 25 minutes.
