- Meanwhile, roll out the puff pastry on a lightly floured surface until large enough to fit in a 9-inch pie plate. Ease into the pie plate and trim the edge; crimp if desired. Scatter the goat cheese and Parmesan in the crust, then top with the sauteed greens.
- Whisk the eggs, heavy cream, nutmeg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl; pour over the greens. Bake until the crust is golden brown and the quiche is set, about 20 minutes. Slice into wedges.

TOMATO AND GOAT CHEESE TART
The tomato tarts and quiches I've been eating in Provence are delightful. Spreading mustard on the crust before you top it with tomatoes is a new idea that makes perfect sense to me, as mustard is such a perfect condiment for tomatoes.

FRESH TOMATO AND GOATS CHEESE QUICHE
This quiche is the best I have ever had. It has a bit of a bite to it with the Chilli pepper sauce although you could leave this out. The parmesan pastry also adds to the flavour. This came from a BBC calendar for September.

Tips:
- Choose the right tomatoes: Use ripe, flavorful tomatoes for the best flavor. Roma tomatoes are a good option because they have fewer seeds and less water content.
- Roast the tomatoes: Roasting the tomatoes intensifies their flavor and makes them sweeter. You can roast them whole or cut them into halves or quarters.
- Use a good quality goat cheese: Goat cheese adds a tangy, creamy flavor to the quiche. Look for a goat cheese that is fresh and has a mild flavor.
- Don't overcook the quiche: The quiche is done when the center is just set. Overcooking will make the quiche dry and rubbery.
- Let the quiche cool slightly before serving: This will help the quiche to set and make it easier to slice.
Conclusion:
This fresh tomato and goat cheese quiche is a delicious and easy-to-make dish that is perfect for brunch, lunch, or dinner. It's also a great way to use up leftover tomatoes. With its creamy, tangy filling and flaky crust, this quiche is sure to be a hit with everyone who tries it.
