Sadly, that restaurant closed its doors, so I was forced to recreate my favorite dish. *I have made these with havarti and swiss cheeses instead of the cheddar: all are equally good!* NOTE: After reading the review, please note: You definitely want to use rice that is somewhat sticky. Do not use leftover fluffy rice that has had the starch rinsed off as they will not hold together well.

  • Saute onion in 1 T butter over medium heat until translucent and beginning to brown. Remove from heat and allow to cool.

vegetable oil
1 -2 beaten egg
raw shrimp, cut in pieces (optional)
leftover ham, diced (or any leftover meat, poultry or seafood)
dry sherry
light soy sauce (optional)
frozen peas, defrosted
sliced yellow onions or Spanish onion
salt
white pepper (optional)

Steps:

  • The rice should be smoothed out to get rid of any lumps.
  • Day old, cold rice works best.
  • If using eggs (recommended), lightly beat them with a pinch of salt.
  • Heat a little oil in your wok, pour eggs in and tilt the wok back and forth to spread evenly.
  • Lift the edges to let the uncooked portion come in contact with the hot pan so it cooks evenly.
  • After the eggs set up a little, lightly scramble them so you have medium small pieces.

5 tablespoons oil, divided
1 onion, diced
1 teaspoon garlic, minced
1 carrot, shredded
1 (16 ounce) package frozen peas

1/2 cup soy sauce, Soy Sauce Substitute - Gluten Free

Steps:

  • Put 3 tbs oil in a large pan and heat up.
  • Once heated add in cold rice and let sizzle and brown, stirring occasionally. This usually takes about 10 minutes.

4 eggs, whole, beaten
1 tablespoon olive oil (to fry the beaten eggs)
3 tablespoons olive oil
2 garlic cloves
4 -5 green onions, with shoots, chopped
1 cup peas, pre-cooked
1 cup mushroom, pre-cooked, chopped
1/3 cup carrot, pre-cooked, diced
2 cups ham, pre-cooked, chopped
1 cup baby shrimp, washed, thawed, pre-cooked

Steps:

  • In a large pan, heat the olive oil to fry and scramble the beaten eggs. Keep aside.

2 tablespoons vegetable oil
1 tablespoon minced garlic
1/2 cup chopped scallions
4 cups cold cooked rice
3/4 cup frozen peas
1 large egg, beaten
1 cup diced smoked ham
1/2 teaspoon salt
1/4 teaspoon ground white pepper

Steps:

  • 1. Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 tablespoon of the oil, add the garlic and scallions, and stir-fry 10 seconds. Add the rice and the peas and stir-fry 2 to 3 minutes, breaking up the rice with a metal spatula.

Steps:

  • Use a large skillet; pour enough oil to cover the bottom of the skillet.
  • Heat oil over medium heat.
  • On a plate, place enough flour to cover the plate.
  • Then rolled your ham in the flour until well coated.
  • When oil is starting to sizzle place ham in the skillet.
  • Cook until golden brown on both sides.
