Number Of Ingredients 3

1 1/2 pounds large peeled and deveined shrimp
Coarse salt and freshly ground pepper
2 tablespoons olive oil

Steps:

  • Season shrimp with coarse salt and ground pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add half the shrimp; cook until opaque throughout, 2 to 3 minutes. Repeat with another tablespoon oil and remaining shrimp.
  • Serve with Green Curry Cashew Sauce if desired.

Tips:

  • Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If using frozen shrimp, thaw them in the refrigerator overnight or under cold running water for 30 minutes.
  • Choose the right size shrimp: Shrimp are typically sold by size, with the smaller shrimp being more affordable and the larger shrimp being more flavorful. For fried shrimp, medium or large shrimp are a good choice.
  • Clean the shrimp: Before cooking, remove the heads, tails, and shells from the shrimp. You can also devein the shrimp by making a shallow incision along the back and removing the dark vein.
  • Season the shrimp: Before frying, season the shrimp with salt, pepper, and any other desired spices. You can also marinate the shrimp for 30 minutes in a mixture of olive oil, lemon juice, and herbs.
  • Use a light batter: A light batter will help the shrimp stay crispy. A simple batter can be made with flour, eggs, and milk. You can also add cornstarch or baking powder to the batter for a lighter texture.
  • Fry the shrimp in hot oil: Heat the oil to 350 degrees Fahrenheit before frying the shrimp. This will help the shrimp cook quickly and evenly.
  • Serve the shrimp immediately: Fried shrimp are best served immediately after they are cooked. You can serve them with a variety of dipping sauces, such as cocktail sauce, tartar sauce, or ranch dressing.
