PERFECT FRIED POTATOES

Time 35m

Yield 8 to 10 servings

Number Of Ingredients 10

5 pounds small Yukon gold potatoes, quartered
Kosher salt
1 tablespoon flaked sea salt
2 teaspoons freshly cracked black pepper
2 teaspoons smoked paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
Vegetable oil, for frying
2 sprigs fresh rosemary
1/4 cup sliced garlic

Steps:

  • Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
  • In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
  • Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.

POTATO & SPAM SKILLET (WIMPY FRIES)

Potato & Spam Skillet (Wimpy Fries) image

Wimpy fries. If you like fried potatoes and cheese (who doesn't?) you are going to love this. Absolute family favorite and easy to make. The jalapeno sauce, which is optional, is very mild and adds a lot of flavor, not heat. Also, sometimes I like a couple of egg's over easy on the side with mine, just a personal preference. Enjoy.

Provided by The unknown chef

Categories     One Dish Meal

Time 55m

Yield 6 Wimpy fries, 6 serving(s)

Number Of Ingredients 10

3 tablespoons oil
2 (12 ounce) cans Spam, small cube 1/2-inch
1 large green pepper, diced
1 large onion, diced
4 lbs potatoes, skin on, roughly cubed 1/2-inch to 3/4
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
12 slices processed cheese
1 (2 ounce) bottle tabasco green jalapeno sauce (optional)

Steps:

  • Add oil, spam, green pepper, onion, potatoes and spices to a large skillet over medium heat. If you like a little spice add a couple of good shakes of jalapeno sauce, it's very mild. Mix with an egg flipper then cover tightly with aluminum foil and set timer for 5 minutes.
  • After 5 minutes flip mixture over and repeat like this for 30 minutes (5 minutes cover, flip, etc) if it starts to stick to the pan add 3 or 4 tbs water, this helps to make steam which will cook the potatoes.
  • When you see the potatoes breaking down around the edges stick a fork in one, if it goes in you will know it is done.
  • This make 6 servings so when you plate it take 2 cheese slices per plate and pull them into stripes and lay on top of fries (an extra slice of cheese at this point never hurts either), nuke for 45 seconds on high and serve.
  • Optional: Some people like a couple of shakes of jalapeno sauce on top, some do not. It adds a lot of flavor, not a lot of heat.
  • DO NOT USE REGULAR HOT SAUCE IN PLACE OF THE JALAPENO, JUST LEAVE IT OUT.
  • Also, when you cut up your potatoes don't make them all exactly the same size, you will get a better texture in the finished product this way.
  • Enjoy.

Tips:

  • To achieve perfectly crispy spam, ensure the oil is shimmering before adding the diced spam. This helps create a golden crust while maintaining its juicy interior.
  • For a more flavorful result, consider using a cast iron skillet when frying the spam. Cast iron retains heat exceptionally well, resulting in evenly cooked spam with a delightful crust.
  • Don't overcrowd the pan when frying the spam. Give the pieces ample space to crisp up without steaming each other. This ensures each piece gets its moment to shine.
  • When boiling the potatoes, add a generous amount of salt to the water. This helps enhance the potato's natural flavor and adds a subtle depth to the dish.
  • To achieve crispy, golden potatoes, drain them thoroughly after boiling and then toss them in a heated pan with some oil. This creates a delightful contrast between the crispy exterior and the soft, fluffy interior.
  • Don't be afraid to experiment with different seasonings and herbs. A sprinkle of garlic powder, paprika, or chili flakes can add an extra layer of flavor to the spam and potatoes.

Conclusion:

Fried Spam and Potatoes is a classic dish that combines the irresistible flavors of crispy spam and perfectly seasoned potatoes. It's a versatile dish that can be enjoyed for breakfast, lunch, or dinner. With its easy-to-follow recipe and customizable flavors, this dish is sure to become a favorite in your household. Whether you're a seasoned cook or just starting, give this recipe a try and experience the deliciousness of this iconic combination.
