ITALIAN PAN-FRIED CHICKEN THIGHS WITH CREAMY TOMATO SAUCE

Italian Pan-Fried Chicken Thighs with Creamy Tomato Sauce image

This is a quick dinner that is ready in under 30 minutes. To save a little bit on the fat/calories I use a split ratio of cream and milk. This is not a requirement. Serve with your choice of sides. I like spaghetti noodles, or zucchini zoodles.

1 clove garlic
1 green onion
1 white onion
4 egg yolks
1 lemon, juiced
1/2 cup vegetable oil
Salt and pepper
Hot taste pepper sauce, to taste
2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
1 shallot, finely diced
1 clove garlic, minced
8 to 10 pieces alligator meat
1 can whole peeled tomatoes
1/4 cup chopped fresh parsley leaves
1 lemon, juiced
Kalamata olives, chopped
Salt and pepper
8 to 10 pieces alligator meat
2 tablespoons olive oil
4 tablespoons butter, plus an additional 1 to 2 tablespoons for thickening sauce
1 large shallot, chopped
1 cup chicken stock
2 tablespoons all-purpose flour
2 tablespoons capers
2 lemons, juiced, plus additional wedges for garnish

Steps:

  • Combine equal parts of plain bread crumbs and flour in a small bowl. Dip the alligator meat in the flour mixture and set the pieces aside. In a large skillet, heat the oil over medium-high heat. Add the alligator meat to the hot oil and pan-fry until all sides are evenly browned. When the alligator is cooked through, remove the meat with tongs, and drain the excess oil on a paper towel-lined plate. Immediately add salt and freshly ground pepper to taste. Before serving, squeeze the juice of 1 lemon on top of the fried alligator.
  • In a food processor, pulse the garlic, green onion, and white onion until minced and thoroughly combined. Add the egg yolks and lemon juice, and pulse again until blended. Slowly drizzle the oil into through the feeding tube of the processor until the sauce emulsifies. When the sauce is thickened, add salt, pepper, and a couple drops of hot pepper sauce, to taste. Serve as a dipping sauce for the Fried Alligator.
  • Combine the olive oil and butter in a large skillet over medium-high heat. When hot, add the onion and shallot to the pan, and saute for 2 to 3 minutes. Add the garlic, and then add the alligator meat. Saute the alligator for 8 to 10 minutes, or until the meat begins to brown, flipping the meat when the first side begins browning. Add the tomatoes, parsley, lemon juice, and olives to the pan. Bring to a simmer, and then lower heat to maintain a simmer for 35 to 40 minutes. Add salt and pepper, to taste.
  • Pound the alligator with a meat mallet to tenderize. Heat a large skillet over medium-high heat, and then add the olive oil and 4 tablespoons of butter. Add the shallot, and saute for 4 to 5 minutes, stirring with a wooden spoon so that it doesn't burn. Add the alligator meat to the pan, and saute for an additional 8 to 10 minutes, or until the alligator browns slightly. Add chicken stock and flour, and then cook for 2 to 3 minutes, or until the sauce thickens. Lower the heat to medium-low, and add the capers and lemon juice, and then simmer for 15 minutes. Add butter, as needed, to thicken the sauce. Garnish the plate with lemon wedges.

LENTILS AND TOMATO SAUCE WITH MACARONI AND FRIED ONIONS

Lentils and Tomato Sauce With Macaroni and Fried Onions image

Always on the lookout for a good vegetarian recipe, I found this in Joy of Cooking. The whole family loved it -- even my picky husband -- and it's a good way to use up the lentils I always have left over after making lentil soup. Although the recipe calls for 3 cups of water, I highly recommend using 2 cups of vegetable broth and 1 cup of water to give this dish a richer flavor.

Provided by TasteTester

Categories     Low Protein

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 14

3 tablespoons olive oil
3 cups diced onions
2 garlic cloves, minced
1 1/2 cups lentils, picked over and rinsed (brown or green)
3 cups water (I use 1 cup water and 2 cups vegetable broth)
1 (28 ounce) can whole tomatoes, with juice
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground allspice
1 teaspoon salt
1/4 teaspoon ground black pepper
2 cups uncooked ditalini (can substitute elbow macaroni, if desired)
1/2 teaspoon cumin seed
red pepper flakes (optional)

Steps:

  • Heat the olive oil in a large skillet over medium-low heat. Add the diced onions and cook, stirring, until the onions are golden brown, about 20 minutes, being careful not to let them get too dark. Remove half of the onions and reserve. Stir the garlic into the remaining onions and cook for 1 minute.
  • Stir the lentils and water (or water/broth combo) into the onion mixture. Cover and bring to a boil. Reduce the heat to medium-low and cook until the lentils are tender, about 25 minutes.
  • Stir in the tomatoes, cumin, coriander, and allspice. Cover and cook for 10 minutes. Uncover and simmer, stirring to break up the tomatoes, until the mixture is thickened, about 10 minutes. Season with salt and pepper.
  • Meanwhile, cook the pasta in plenty of boiling salted water until tender but firm, about 10 minutes. Drain. Quickly dry the pasta cooking pot and add the reserved onions along with the cumin seeds. Cook, stirring over medium-high heat until the onions are sizzling. Add the drained macaroni and stir to combine. Taste and adjust the seasonings. To serve, spoon the macaroni into individual bowls and top with a ladleful of the spiced lentils. Sprinkle with red pepper flakes to taste, if desired.

Categories     side-dish

Time 2h45m

Yield 8 servings

Number Of Ingredients 29

1/4 cup rice flour
2 cups all-purpose flour
1 tablespoon baking powder
1/2 cup cornstarch
1 tablespoon salt
1 teaspoon cayenne
3 cups soda water
1 (8-ounce) log mild goat cheese, softened
5 sprigs thyme, leaves removed and chopped
2 tablespoons chopped chervil
2 tablespoons chopped chives
1 teaspoon chopped rosemary leaves
Salt
Freshly ground black pepper
1 to 2 tablespoons extra-virgin olive oil
16 squash blossoms
Tomato Sauce, recipe follows
Fried Basil Leaves, recipe follows
3 tablespoons extra-virgin olive oil, plus 2 tablespoons
1/4 cup finely chopped onion
1 tablespoon chopped garlic
Pinch chili flakes
2 cups peeled, seeded, and diced tomatoes
Salt and pepper
1 teaspoon sugar
4 thyme sprigs, leaves removed and chopped
4 basil leaves, chiffonade
Vegetable oil or peanut oil
8 basil leaves

Steps:

  • Tempura Batter:
  • Sift together all of the dry ingredients. Whisk in the soda water, a little at a time, until the right consistency is achieved. The batter should coat the back of a spoon, but some excess batter should run off the spoon. Allow to rest in the refrigerator at least 1 hour before use.
  • Goat Cheese Filling:
  • Combine all of the ingredients and mix well. Shape the mixture into 1 tablespoon balls. Make sure the squash blossoms are well cleaned. Open the flowers and insert 1 goat cheese ball in each flower. Gently press the filling into the base of the flower. Cover with the petals and pinch the top to seal. Refrigerate for 30 minutes.
  • Preheat a fryer or a deep pot halfway filled with peanut oil to 375 degrees F.
  • Hold the squash blossoms by the stem. Dip each into the tempura batter, making sure to coat completely. Let any excess batter drip off. Place the blossom in the oil and fry until golden brown, about 1 to 2 minutes, turning often to brown evenly. Remove to a paper towel lined plate.
  • Place some of the Tomato Sauce on the bottom of a plate. Top with 2 squash blossoms and garnish with Fried Basil leaves.
  • Heat a large saute pan over medium-high heat. When the pan is hot, add 3 tablespoons of the olive oil and heat. Add the onion, garlic, and chili flakes and cook for 1 minute. Add the tomatoes and season with salt and pepper. Add the sugar and stir to combine. Lower the heat and cook until the tomatoes start to disintegrate and mixture is of sauce consistency, about 15 minutes. Add the thyme, basil, and remaining olive oil and mix well.
  • Heat about 1/2-inch of the oil in a steep-sided saute pan to 350 degrees F. Or heat a deep fryer to 350 degrees F.
  • Pat the basil leaves dry to remove any surface water. Carefully drop the basil leaves in the hot oil. The oil will spit and splatter as the moisture in the leaves fries. Fry for 10 seconds or just until the leaves start to become translucent. Remove with a slotted spoon to a paper towel lined plate.

FRIED TOMATO SAUCE

FRIED TOMATO SAUCE image

Categories     Sauce     Tomato     Sauté     Low Carb     Vegetarian     Quick & Easy     Healthy

Yield 6

Number Of Ingredients 9

1 35 oz. can whole San Marzano Italian plum tomatoes
1/4 cup extra virgin olive oil
2 tbs garlic, roughly chopped
1/2 dry, good white wine
1/4 tsp red pepper flakes
1/3 cup chopped fresh basil
1 tsp sugar
1/2 tsp salt
a turn or two of fresh black pepper

Steps:

  • Open the can of tomatoes and using kitchen shears, cut the tomatoes apart with a scissor motion right in the can, until they are rough chopped (saves a lot of mess this way). Drain tomatoes, reserving juice. Heat the olive oil in a preheated med-lg. sized saute pan until very hot, but not smoking - the larger width of the pan allows the juices to evaporate quicker, thus helping to thicken the sauce a bit. When olive oil is hot add garlic and hot pepper flakes and quickly stir with wooden spoon for 10 seconds. Garlic will turn golden, but shouldn't brown. Slowly add cut up tomatoes (mixture will sizzle at first). Cook on med. high heat, stirring often. Raise heat to high and add white wine. Cook for 5 min, then add reserved tomato juices, sugar, salt and fresh pepper. Stir. Add half of the basil to the sauce. Reduce heat to simmer and cook, stirring often, for approximately 20 minutes. Add the rest of the basil to the cooked sauce, stir and serve over pasta or vegetables with plenty of grated cheese. Keeps refrigerated for 5 days.

Tips:

  • Choose the right tomatoes: Use ripe, flavorful tomatoes for the best results. Roma tomatoes are a good choice because they have fewer seeds and a thicker flesh.
  • Don't overcrowd the pan: When frying the tomatoes, make sure to not overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to stick.
  • Use a heavy-bottomed pan: A heavy-bottomed pan will help to evenly distribute the heat and prevent the tomatoes from burning.
  • Cook the tomatoes over medium heat: Medium heat is best for frying tomatoes. This will help to prevent them from burning and will allow them to cook through evenly.
  • Season the tomatoes to taste: Season the tomatoes with salt, pepper, and other herbs and spices to taste. You can also add a bit of sugar to help balance out the acidity of the tomatoes.

Conclusion:

Fried tomatoes are a delicious and versatile dish that can be enjoyed in many different ways. They can be served as a side dish, an appetizer, or even as a main course. They can also be used as a topping for pizza, pasta, or chicken. No matter how you choose to enjoy them, fried tomatoes are sure to be a hit.
