Frijoles borrachos, a classic Mexican dish, is a flavorful and hearty stew made with black beans, bacon, and beer. The origins of this dish can be traced back to the early 1900s when it was a popular dish among Mexican cowboys working on cattle ranches. Today, it remains a favorite among many Mexican families, as it's a perfect combination of flavors and textures, with the beans providing a creamy base, the bacon adding a salty smokiness, and the beer lending a slightly bitter and nutty flavor.

6 c water
1 1/4 tsp salt
4 slice bacon, cut into small pieces

  • 9. Let the mixture come to a roiling boil for 2 or 3 minutes and add it to the beans. Stir to mix.
  • 10. Replace the lid and cook at a slow simmer for about another hour or until the beans are very tender.

Tips:

  • Soak the beans overnight: This will help them cook more evenly and quickly.
  • Use a variety of beans: This will give your dish a more complex flavor and texture.

  • Add other ingredients to your taste: This could include vegetables, spices, or meat.
  • Serve with your favorite sides: Frijoles borrachos can be served with rice, tortillas, or bread.
