Steps:

  • Preheat oven to 200C. Boil the new potatoes for ten minutes until tender, allow to cool, then slice
  • Beat the eggs as though you were to be making an omlette
  • Heat the oil in an oven proof frying pan then add the sliced potatoes. Mix the peas and feta together then pour over the sliced potatoes.
  • Heat until the base is cooked, then pop in the oven for 20-25 mins or until a knife comes out clean when inserted.
  • Serve and enjoy.

Tips:

  • Choose the right pan: Use an oven-safe skillet that is large enough to accommodate all of your ingredients comfortably. A 10-inch skillet is a good option.
  • Use fresh ingredients: The fresher your ingredients, the tastier your frittata will be. Choose fresh vegetables that are in season and use high-quality eggs and cheese.
  • Don't overcook the eggs: The eggs should be cooked through but still slightly runny in the center. Overcooked eggs will be tough and rubbery.
  • Add your favorite toppings: Once the frittata is cooked, you can top it with your favorite toppings. Some popular options include salsa, guacamole, sour cream, and cheese.

Conclusion:

Frittata with leftover turkey is a delicious and easy way to use up your Thanksgiving leftovers. It's a versatile dish that can be served for breakfast, lunch, or dinner.
