1 teaspoon cinnamon

1 (15 ounce) can peaches in light syrup, undrained
1/2 cup brown sugar, packed
1/2 cup fat free egg substitute or 2 eggs
3 tablespoons canola oil (or other vege oil)
4 cups bran flakes
1/2 cup blueberries (fresh/frozen)

Steps:

  • Preheat oven to 375F.
  • Spray a 12-muffin tin with non-stick spray and set aside, or use muffin liners.
  • Combine flour, baking soda, cinnamon and salt in a medium bowl.
  • Set aside.
  • Drain peaches and reserve 1/3 cup of syrup.
  • Puree peaches and reserved syrup in a blender, until smooth.
  • Whisk the peach puree, sugar, egg substitute and oil.
  • Add Bran Flakes and mix well.
  • Add flour mixture and stir until dry ingredients are just moistened.

1/2 teaspoon ground cinnamon
1 pinch salt
1 tablespoon butter, unsalted
1/2 cup finely chopped walnuts
2 1/2 cups unbleached white flour, up to 2 3/4 cups
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 pinch salt
1 1/3 cups firmly packed light brown sugar
2/3 cup vegetable oil
1 tablespoon limes, lemon or 1 tablespoon orange zest, see note
1 egg
1 cup buttermilk
2 teaspoons vanilla extract
1 3/4 cups loosely packed fruit, see note

Steps:

  • For the streusel topping:.
  • Mix sugar, cinnamon and pinch of salt in a small bowl or work bowl of a food processor, add butter. If mixing by hand, use fingertips, a pastry blender, or 2 forks to blend the fat into dry ingredients until mixture looks like coarse irregular crumbs, with no visible lumps of butter. If mixing in a food processor, pulse about 10 times, then process 5 to 10 seconds, until there are no visible lumps of butter; stir in nuts. Set aside.
  • For the muffins:.
  • Adjust oven rack to middle position and heat oven to 400 degrees. Lightly grease the top surface of a 12-cup muffin pan; use liners, if necessary.
  • Whisk 2 1/2 cups flour with next 4 ingredients in a medium bowl, set aside.
  • Whisk together next 4 ingredients in a large bowl; whisk in buttermilk and vanilla. Gently whisk dry ingredients into wet ingredients to partially blend. Continue mixing batter with a rubber spatula, making sure that ingredients at the bottom are incorporated into batter fold in fruit. (Frozen fruit will help "firm" up batter. If batter seems too wet add a few more tablespoons of flour, up to 1/4 cup, to stiffen batter.).
  • Using an ice-cream scoop, place a portion of batter into each muffin cup, filling to the brim. Sprinkle a portion of streusel topping over batter in each muffin cup.
  • Bake 15 minutes, reduce heat to 350 degrees and bake 10 to 12 minutes or until muffins are golden brown and spring back when lightly pressed with fingertips. Let muffins cool in pan for 5 minutes then transfer them to a wire rack. Serve warm or at room temperature.
  • NOTES:.
  • To simplify muffin making, quadruple the streusel topping recipe and freeze.
  • Orange, lemon, or lime zests can be used to flavor the muffins, if you like.
  • Lemon works well with blueberry.
  • Orange zest with cranberry or rhubarb.
  • Lime zest with banana chunks.
  • Almost any fruit works in this recipe. Good choices include:.
  • apples, cut into small dice.
  • bananas, cut into firm, small chunks.
  • blueberries.
  • cranberries, coarsely chopped.
  • dried sour cherries or cranberries.
  • raspberries.
  • rhubarb, diced (fresh or frozen).

1 cup bran cereal, such as All-Bran

Steps:

  • Preheat the oven to 425 degrees F. Grease muffin pans or line with paper liners.
  • For the batter: In the bowl of a stand mixer, combine the yogurt, peaches, brown sugar, cane sugar, canola oil, vanilla and egg. Mix until combined. 1/2 cup mixed dried fruit (if you can't find pre-mixed dried fruit, make your own combination or use raisins)

1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
1 cup unsweetened applesauce
1/3 cup brown sugar (use a half cup if you like your muffins sweeter)
1/2 cup low-fat buttermilk (or use 1/3 cup non-fat yogurt plus skim milk to level it off to 1/2 cup)
2 tablespoons canola oil

Steps:

  • Preheat oven to 350 degrees (180c).
  • In one bowl combine all of the dry ingredients - oat bran, oatmeal, fruit, cinnamon, nutmeg, baking powder, baking soda and salt.
  • In a second bowl, lightly beat the egg whites by hand. Whisk in the yogurt, oil, applesauce and brown sugar. Fold the wet ingredients into the dry ingredients until just mix. Do not over beat as it will result in a tough lumpy muffin.

3/4 cup uncooked oat bran
1/2 cup all-purpose flour
3 tablespoons packed brown sugar
5 teaspoons baking powder
1 teaspoon ground cinnamon
1 cup skim milk
1/4 cup fresh orange juice
2 large egg whites
2 tablespoons vegetable oil
1 medium banana, mashed
2 teaspoons orange zest

Steps:

  • Spray a 12-cup muffin pan with non-stick cooking spray.
  • Preheat oven to 400°F.
  • Combine the fruit, oats, oat bran, flour, banana, brown sugar, baking powder and cinnamon in a food processor.
  • Pulse until mixture is just blended, then transfer to a bowl.
  • Combine milk, orange juice, egg whites, oil and orange zest in another bowl.
  • Add the milk mixture to the dried fruit mixture; stir just until blended.
  • Spoon batter into muffin cups, filling two-thirds full.
  • Bake 15 minutes or until the surface of the muffins are golden brown and spring back when lightly pressed, or until toothpick inserted in center comes out clean.
  • Remove from pan and cool on a rack for 10 minutes before serving.
  • Store in an airtight container at room temperature for up to 3 days.

This was a recipe I put together to use up some dried fruit. They are a dense muffin and reduced fat. You can use a sugar substitute to even reduce the calories. I sometimes use an egg substitute, too. These muffins have become so popular with our friends that every time we have a tailgate party or golf get together I must bring them.

1 cup rolled oats
1 cup buttermilk
1 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 egg
4 ounces applesauce
3/4 cup brown sugar
1 teaspoon vanilla
1 cup dried mixed fruit
1/2 cup walnuts, chopped

Steps:

  • Pre heat ovens to 375.
  • Grease and flour muffin pan.
  • Soak oats in buttermilk for 5 minutes.
  • Combine dry ingredients,set aside.
  • Combine beaten egg,applesauce, brown sugar, vanilla and blend well.
  • Add to oatmeal/buttermilk, blend well.
  • Fold in dry ingredients.
  • Mix till wet.
  • Add in fuit and nuts.
  • Fill muffin cup 3/4 full.
  • Bake 15 to 20 minutes.

1/2 cup prune juice
1/2 cup skim milk

  • Mix bran, prune juice, skim milk and brown sugar.

  • Stir in apple sauce raisins and walnuts.
  • Spoon equally divided into greased muffin tins.
  • Bake in 425 degree oven for 15-20 minutes until lightly brown and springy to the touch.

10 dried apricot halves, chopped fine
1/3 cup water
1 cup whole wheat pastry flour
1/2 cup old fashioned oats
1/3 cup granulated sugar

1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3 tablespoons powdered milk
1/2 cup unsweetened applesauce
1/2 cup pumpkin puree
1 egg, lightly beaten
1/3 cup cashews, roasted without salt and coarsely chopped
1/4 cup apricot preserves

Steps:

  • Preheat oven to 400 degrees
  • Prepare a non-stick muffin tin by spraying with non-stick cooking spray of if you prefer, use paper muffin liners
  • In a small microwavable bowl, place the raisins, chopped apricot halves and 1/3 cup water
  • Microwave for 45 seconds or until hot
  • Cover the bowl and allow fruit to plump while mixing the remaining ingredients
  • In a large bowl, mix together the flour, oats, sugar, nutmeg, cinnamon, powdered milk, baking powder and salt
  • Add the applesauce, pumpkin puree and egg, mixing until thoroughly combined
  • Drain any water from fruit that has not been absorbed and add fruit to muffin batter along with chopped cashews; stir to blend
  • Divide batter into 9 muffin cups and bake in preheated oven for 15 to 20 minutes or until toothpick inserted off center comes out clean
  • Immediately remove muffins from tin and spread each with a small amount of apricot preserves
