This one was taken from a cookbook, faxed to me at work and cooked up using enough of my own variants to make it almost original. It's delicious, despite the unusual combination of ingredients.

1/2 cup crushed corn flakes
1/2 teaspoon ground black pepper
1/4 teaspoon chili powder
4 boneless skinless chicken pieces
1 large onion
1 apple
1 cup chicken stock
400 g crushed pineapple in juice
2 tablespoons soy sauce
2 tablespoons lemon juice
1 tablespoon butter
2 bananas
1/2 cup sliced almonds
1/4 cup sultana

Steps:

  • Combine cornflakes, chili powder and pepper. Cut chicken into serving pieces - about 8 should suffice. Roll these in the cornflakes until coated as best you can. Set aside.
  • Spray frying pan with oil and brown chicken on all sides. Remove from pan and place into a casserole dish.
  • Cook onion until translucent. Peel the apple and cut into thin slices. Add these to frying pan for about two minutes, stirring constantly.
  • Add in chicken stock, crushed pineapple, lemon juice and soy sauce. Bring to the boil.
  • Pour resulting mix over the chicken in the casserole. Cook at 180 degrees Celsius for about an hour.
  • Melt butter in the frying pan. Peel bananas and cut in half lengthwise, then into half again. Add bananas to frying pan and cook until lightly brown all over. Add in flaked almonds and sultanas. Stir frequently and fry until lightly browned (about 2-3 minutes).
  • Dish casserole onto plates and divide bananas and almonds evenly among them. Serve with rice or a salad.

4 cups uncooked egg noodles
4 cups cubed cooked chicken
1 package (16 ounces) frozen peas and carrots
2 cups whole milk
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup chopped onion
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain noodles; add to chicken mixture., Transfer to 2 greased 8-in. square baking dishes. Cover and bake 30 minutes. Uncover and bake 10-15 minutes longer or until heated through. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. My Nana's recipe for fruity chicken curry that she used to make in the 1970's when she was a pub landlady.

Steps:

  • In a large frying pan, fry the chicken breast until browned or, if you prefer you can just drop the raw chicken into the curry later.
  • Add the onion, apple and banana to a medium sized casserole dish and fry until the onion has softened. (About 10 minutes)
  • Add the curry paste and curry powder and stir into to the mixture.
  • Add the chicken stock followed by the chicken.
  • Simmer on a low heat for 30 minutes, stirring occasionally with the lid off. The liquid should reduce down.
  • Add the coconut milk, raisins, nuts and chick peas (If using) and continue to cook for another 10 minutes.
  • Serve with steamed/boiled white rice.

Tips:

  • For the chicken, you can use any type of boneless, skinless chicken breasts, thighs, or tenderloins.
  • If you want a thicker casserole, you can add more flour to the sauce.
