- In large sauté pan over low heat, heat 2 tablespoons olive oil. Add red, yellow, and green peppers; scallions; celery; and pimientos. Sauté until soft, 8 to 10 minutes. Transfer to large bowl and let cool.

- In large skillet over moderately low heat, heat 2 tablespoons olive oil. Add 4 crab cakes and fry until potatoes are golden and crispy, 4 to 5 minutes per side. - Make the crust: Pulse the flour, sugar and salt in a food processor to mix. While pulsing, drop the butter through the feed tube. - Bake for about 20 minutes, or until the potatoes are softened and cooked through (test with the point of a knife). Scatter with chives, if using, and let cool for at least 10 minutes before serving. The galette is also good warm or at room temperature.
