This is a quick pizza to through together. What I especially love is that my kids devoured it even though it was covered in vegetables and there wasn't a piece of meat in sight. Substitute your own favorite vegetables (zucchini, onion, cauliflower), the possibilities are endless.

Yield 16 servings

Number Of Ingredients 10

1 pkg (13.8 oz) refrigerated pizza crust
1/2 cup mayonnaise
1/2 package (1 oz) ranch seasoning and salad dressing mix (2 Tbsps)
1 garlic clove, pressed
2 cups (8 oxz) shredded mozzarella cheese, divided
1 cup coarsely chopped broccoli
1/2 cup diced red bell pepper
1 medium carrot, sliced
1/2 cup pitted ripe olives, sliced
1/4 cup (1 oz) grated fresh Parmesan cheese

Steps:

  • 1. Reheat oven to 425 degrees F. Lightly sprinkle large round stone with flour. Unroll pizza dough on baking stone, shaping into a circle. Roll dough to edge of baking stone. 2. Combine mayonnaise, seasoning mix and garlic; whisk. Sread mixture evenly over crust to within 1/2 inch of edge. Top with half of the mozzarella cheese. 3. Coarsely chop broccoli. Dice bell pepper. Slice carrot using crinkle cutter. Slice olives using egg slicer. Sprinkle vegetables over pizza; top with remaining mozzarella cheese. Grate Parmesan cheese over pizza. 4. Bake 18-22 minutes or until edges are golden brown. Remove from oven; let stand 10 minutes. Cut into wedges using a pizza cutter.

Tips:

  • Prepare the dough in advance: To save time and ensure the dough is properly proofed, make the dough ahead of time and let it rise in the refrigerator overnight or for at least 8 hours.
  • Use fresh ingredients: The quality of your ingredients will greatly impact the flavor of your pizza. Use fresh vegetables, herbs, and cheese for the best results.
  • Don't overcrowd the pizza: When topping your pizza, be sure to leave some space between the toppings so that they cook evenly.
  • Bake the pizza at a high temperature: The higher the temperature, the crispier the crust will be. For a thin and crispy crust, bake the pizza at 450°F (230°C) or higher.
  • Watch the pizza closely: Pizzas cook quickly, so keep an eye on it to prevent it from overcooking.
