Categories     Yam/Sweet Potato

Time 55m

Yield 6-8 Servings of Fries, 6-8 serving(s)

Number Of Ingredients 18

4 sweet potatoes (peeled and cut into thin fires)
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon dried coriander
1 teaspoon dried parsley
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
4 tablespoons olive oil
6 ounces plain yogurt
1 tablespoon mayonnaise
1/2 tablespoon honey
1/2 lime, juice of
2 teaspoons garlic, minced
1/4 teaspoon cumin
1/8 teaspoon oregano
1 teaspoon fresh parsley
1/2 teaspoon grated onion (important to grate not chop)
1/2 teaspoon kosher salt, to taste

Steps:

  • Potatoes -- Two important things to note when making these. First. Cut all the fries approximately the same size. Second, make sure to cook directly on the cookie sheet. No foil or parchment paper. After cutting the sweet potatoes fries add to a medium size bowl with the olive oil and seasoning and toss well to combine. Add to the cookie sheet and make sure then are not laying on top of one another. They need some space so they can brown up.
  • Bake -- In a 425 degree oven bake them for 15 minutes and then flip. Guys, they will be soft, they aren't done but be careful flipping them. Bake another 20 minutes until crispy.
  • Dip -- As the fries bake, make the dip. Just mix it all in a small bowl and refrigerate. Nothing more. Grating the onion is important as it gives you a lot more flavor. Just enjoy, these are a great change from the average french fries.

Categories     Potato

Yield 6

Number Of Ingredients 8

ngredients
1/4 cup olive oil
2 cloves garlic, thinly sliced
2 sprigs fresh thyme, bruised*
2 sprigs fresh oregano, bruised*
1 medium russet potato
1 small sweet potato
1/4 teaspoon coarse sea salt or table salt

Steps:

  • In a small saucepan, heat oil, garlic, thyme, and oregano over medium-low heat for 15 minutes. If garlic starts to bubble, turn heat to low. Remove from heat. Let stand at room temperature until cool. Remove garlic and herb sprigs from the oil. Set aside 2 tablespoons of the oil. (Store the remaining oil in an airtight container in the refrigerator for up to 1 week and use in place of olive oil in recipes.) 2. Preheat oven to 425 degrees F. Line two large baking sheets with parchment paper; brush paper with some of the 2 tablespoons herb-infused oil. Scrub potatoes. Use a mandoline to slice potatoes 1/8 inch thick. Arrange russet potato slices in a single layer on one of the prepared baking sheets; arrange sweet potato slices in a single layer on the other prepared sheet. Brush tops of potato slices with the remainder of the 2 tablespoons herb-infused oil. 3. Bake potatoes, one sheet at a time, for 24 to 26 minutes or until potatoes are golden brown, turning potato slices once halfway through baking. Check potatoes often during the last 2 to 3 minutes of baking since they will brown at different rates. Transfer any potato slices that are nicely browned to a clean piece of parchment paper on the counter. Sprinkle lightly with salt. Serve immediately. Tip Bruise herb sprigs by pressing with the flat side of a chef's knife or the back of a large spoon.

ROASTED GARLIC TWICE BAKED POTATO

ROASTED GARLIC TWICE BAKED POTATO image

Categories     Potato

Yield 6 potato

Number Of Ingredients 10

6 medium sized baking potaoes
1 whole garlic bulb
1t EVOO
2T unsalted butter softened
1/2 cup skim milk
1/2 cup low fat buttermilk
1 1/2t fresh rosemary, minced
1/2t salt
1/2t ground black pepper
dash of paprika

Steps:

  • Palce the potatoes in a baking sheet and bake at 400 for 45-55 minutes or until tender. Meanwhile, remove the outer papery skin from the garlic, drizzle with oil and wrap in 2 sheets heavy duty foil. Add the garlic to the oven for 30-35 minutes or until softened. Let garlic and tatoes cool for about 10 minutes. Once cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out the pulp until just a thin shell remains. Place the pulp in a large mixing bowl, add the softened butter and mash. Cut the top off the garlic head, leaving the root intact, and squeeze the softened garlic into the bowl with the tatoes, add the milk, buttermilk, rosemary, salt, and pepper and mix well. Spoon the potato mix back into the shells and place back on the baking sheet. Bake at 425 for 20-25 minutes or until heated through. Remove from oven and add a dash of paprika to each top.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for baked potatoes because they have a fluffy texture and a high starch content, which helps them to crisp up on the outside while remaining soft and fluffy on the inside.
  • Scrub the potatoes well: Scrubbing the potatoes removes dirt and bacteria from the skin. You can use a vegetable brush or a clean sponge to scrub the potatoes.
  • Prick the potatoes with a fork: Pricking the potatoes with a fork helps the steam to escape while they are baking, which prevents them from bursting.
  • Rub the potatoes with oil: Rubbing the potatoes with oil helps them to brown and crisp up in the oven.
  • Season the potatoes with salt and pepper: Seasoning the potatoes with salt and pepper enhances their flavor.
  • Bake the potatoes until they are tender: The baking time will vary depending on the size of the potatoes. A good rule of thumb is to bake them for about 45 minutes to 1 hour, or until they are tender when pierced with a fork.

Conclusion:

Garlic baked potatoes are a delicious and easy-to-make side dish that can be enjoyed with a variety of meals. By following these tips, you can make sure that your garlic baked potatoes turn out perfect every time. So next time you're looking for a simple but flavorful side dish, give garlic baked potatoes a try. You won't be disappointed!
