4 teaspoons salt, or to taste
2 teaspoons paprika
1 ½ teaspoons ground black pepper
¾ teaspoon onion powder
¾ teaspoon garlic powder, or to taste
¾ teaspoon cayenne pepper, or to taste
¾ teaspoon ground coriander, or to taste
¾ teaspoon ground turmeric, or to taste
4 (16 ounce) t-bone steaks, at room temperature

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Stir the salt, paprika, black pepper, onion powder, garlic powder, cayenne pepper, coriander, and turmeric together in a small bowl; set aside.
  • Rub the steaks on all sides with the seasoning mixture. Cook on the preheated grill to your desired degree of doneness, 3 to 3 1/2 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

1/4 cup (1/2 stick) unsalted butter
2 tablespoons olive oil
1 (2-pound) T-bone steak (about 1 inch thick), trimmed and at room temperature
Sea salt and cracked black pepper
6 sprigs thyme
6 cloves garlic, unpeeled

  • Heat the butter and oil in a large frying pan over high heat for 1-2 minutes or until the butter starts to foam. Sprinkle the steak with salt and pepper. 1 large poblano chiles or 2 fresh anaheim chilies
6 cloves unpeeled garlic
3 tablespoons olive oil
1/4 cup unsalted butter, room temperature
1 teaspoon chili powder
1 teaspoon hot pepper sauce
4 (10 ounce) beef t-bone steaks (3/4 inch thick)

Steps:

  • Roast chili over gas flame or under broiler until blackened on all sides.
  • Place chili in paper bag and let stand until cool.
  • Peel, stem and seed chili.
  • Finely chop chili and reserve.
  • Preheat oven to 375.
  • toss garlic with 2 T olive oil in heavy small baking pan.
  • Roast garlic until soft, about 20 minutes; cool.
  • Peel garlic, reserving oil in pan.
  • Mash garlic in small bowl.
  • Add butter, chili powder and hot pepper sauce and blend well.
  • Mix in chopped chili and oil reserved from garlic.
  • Heat remaining 1 tablespoon oil in heavy large skillet over high heat.
  • Season steaks with salt and pepper.
  • Add to skillet; cook to desired doneness, about 3 minutes per side for rare.
  • Arrange steaks on platter.
  • Top steaks with chili butter.

Steps:

  • Prepare barbecue (medium-high heat). Blend first 5 ingredients in small bowl. Sprinkle steaks on both sides with salt. Spread 1/4 of pepper sauce over 1 side of each steak. 1 1/2 lbs beef t bone steaks (at least 1 inch in thickness)
1 tablespoon vegetable oil
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon sweet Hungarian paprika
1/2 teaspoon dry mustard
2 teaspoons cider vinegar
8 tablespoons unsalted butter (chilled and cut into 8 pieces)
3 garlic cloves (medium, peeled, ends removed, put through a garlic press)
1/2 teaspoon salt (kosher)
1/2 teaspoon pepper (cracked)

Steps:

  • Pat steaks dry. Lightly coat the steaks with the vegetable oil and set aside for 30 minutes.
  • In medium saucepan, whisk together the ketchup, Worcestershire sauce, paprika, mustard and vinegar; set aside.
  • Preheat the broiler or grill. Place the steaks on the broiler pan or grill and cook until seared and well crusted on one side, about 5 minutes. Turn the steaks. Season with salt and pepper to taste and cook on second side for 3 minutes for rare or 4 more minutes for medium. Remove from heat and let sit for 5 minutes.
  • For the sauce, place the ketchup mixture over very low heat and heat to just warm. Whisk in the butter pieces, one or two at a time. Whisk constantly; the butter should melt but not become separated. If butter melts to fast, remove from heat and continue whisking. Stir in the garlic and season to taste.
  • Carve steaks into 1/2 inch thick slices and divide among 4 - 6 warm plates. Spoon 2 tbsps. of sauce over each portion. Serve immediately. Serves 6.

16 ounces beef t-bone steaks, store-butcher sliced into thin 1/2-inch steaks (timing will be different for 1-inch steaks!)
4 large garlic cloves, sliced paper thin, large-jumbo sized cloves
1 teaspoon salt
1 teaspoon meat tenderizer, no MSG, unseasoned
2 tablespoons virgin olive oil
1 tablespoon black pepper, coarsely ground

Steps:

  • Oil both steaks well and place into lined broiling pan. Do NOT use rack, or the meat will be dry! Pour remaining oil over steaks and turn steaks over and over to thickly coat.
  • Halve salt, tenderizer, and pepper equally; sprinkle both steaks, both sides. Halve sliced garlic cloves and place on both sides of both steaks.
  • Let steaks marinate a minimum of 4 hours [overnight is highly preferred]. Turn steaks over to saturate other side, half way through marination time, if possible, replacing errant garlic slices.
  • Preheat oven to broil, and broil steaks in broiling pan 4 minutes on top side, flip, and 3 minutes on other side for medium.
  • 3 minutes on top side, flip, and 2 minutes on bottom for medium-rare.
  • 5 minutes on top side, flip, and 4 minutes on bottom for well.

4 tablespoons soy sauce
4 tablespoons hoisin sauce
2 tablespoons dark sesame oil
2 teaspoons chili-garlic sauce
4 garlic cloves, minced
2 tender steaks, 1-inch thick
2 -4 tablespoons chopped parsley (optional)
2 teaspoons toasted sesame seeds

Steps:

  • In ziploc baggie, combine first 5 ingredients.
  • Add steaks, turn bag over and over to coat both sides of each steak well.
  • Marinate in fridge for 30 minutes to overnight.
  • Heat broiler, remove steaks from bag saving marinade.

  • Spoon half of the marinade on steaks.

  • *Let rest 5 minutes before eating.
