Categories     Side Dish

Time 20m

Yield Makes 4 servings

Number Of Ingredients 7

3 tablespoons extra-virgin olive oil
3 cloves garlic, peeled and sliced
Pinch red pepper flakes
1 large bunch kale (7 to 8 cups chopped leaves)
1/2 cup stock, white wine or water, plus more as needed
1/4 teaspoon fine sea salt or more to taste
Half of a lemon

Steps:

  • Rinse the kale, and then pull the leaves from the stems. Discard the stems or save to add to homemade stock another day. Coarsely chop kale leaves into randomly shaped pieces, about 2 inches large.
  • Heat the olive oil in a wide skillet over medium-high heat. When the oil shimmers, add the garlic and red pepper flakes. Cook, stirring often, until the garlic is soft, but before it browns.
  • Add the chopped kale leaves, stock, and 1/4 teaspoon of salt. Cook, tossing the kale around the pan occasionally, until the kale turns bright green, is soft and is wilted, about 7 to 8 minutes. If before the kale is tender, the liquid evaporates, add a little bit more to the pan.
  • Taste and adjust with additional salt, and then finish by stirring in the juice from half a lemon.

LEMON-GARLIC KALE SALAD

Lemon-Garlic Kale Salad image

Here's a snappy, fresh side dish or a light supper: a lemony green salad, rich with tang and crunch. The dressing is nothing more than lemon juice, olive oil, garlic and salt. Its simplicity makes it perfect.

Provided by Julia Moskin

Categories     dinner, lunch, quick, salads and dressings

Time 25m

Yield 8 to 12 servings

Number Of Ingredients 7

2 cups sliced almonds
1/3 cup freshly squeezed lemon juice (from 2 to 4 lemons)
Kosher salt
1 1/2 cups extra-virgin olive oil
4 cloves garlic, crushed with the flat side of a knife, peeled and left whole
10 to 12 ounces washed and dried kale leaves, thick stems removed (weight after trimming)
1 1/2 cups freshly grated Parmesan (optional)

Steps:

  • In a toaster oven or skillet, toast almonds until golden brown and fragrant. Set aside to cool.
  • In a bowl, combine lemon juice and 1 heaping teaspoon salt. Slowly whisk in olive oil. Add garlic cloves and set aside to steep.
  • Working in batches, cut the kale into thin ribbons: gather a large handful of leaves, bunch together tightly, and use the other hand to slice into 1/4-inch-thick pieces. This need not be done very precisely or neatly; the idea is to end up with a kind of slaw. (Recipe can be made up to this point 1 day ahead. Keep kale and dressing refrigerated separately.)
  • Place chopped kale in a very large bowl. Sprinkle surface with almonds and then with cheese, if using. Remove and discard garlic cloves from dressing. Pour half the dressing over the salad and toss. Taste for dressing and salt and add more as needed, tossing to coat thoroughly. Serve within 1 hour.

Garlicky Creamed Kale image

Provided by Guy Fieri

Categories     side-dish

Time 40m

Yield 4 servings

Number Of Ingredients 8

3 pounds fresh kale
Kosher salt
1 tablespoon unsalted butter
1 tablespoon minced fresh garlic
3 cups heavy cream
Freshly cracked black pepper
1/2 cup finely grated Parmesan
1/8 teaspoon freshly grated nutmeg

Steps:

  • Prepare the kale by removing the center stems and tearing the leaves into bite-size pieces. Set a large pot of water over high heat and bring to a boil. Season generously with salt. When it returns to a boil add the kale. Stir well so it cooks evenly. When it turns bright green and becomes tender, 10 to 12 minutes, remove and drain in a colander.
  • To a high-sided saute pan over medium heat, add the butter and garlic. Stir in the cream with some salt and pepper. Set over high heat and bring to a simmer. Cook until the cream reduces by half, 6 to 7 minutes. Once reduced, add the kale, Parmesan, nutmeg and more salt and pepper and bring back to a simmer so the kale is heated through and the Parmesan has melted. Stir to coat everything evenly. Taste and season again if needed.

Tips:

  • Choose the right kale. Look for kale with dark, leafy greens and no signs of wilting or yellowing.
  • Wash the kale thoroughly. Kale can be gritty, so be sure to rinse it well before using.
  • Remove the tough stems. The stems of kale can be tough and fibrous, so it's best to remove them before cooking.
  • Massage the kale. Massaging the kale with a little olive oil or lemon juice helps to break down the fibers and make it more tender.
  • Don't overcook the kale. Kale is a delicate green, so it's important to not overcook it. Otherwise, it will become tough and bitter.
  • Season the kale to taste. Kale has a slightly bitter flavor, so it's important to season it well. Salt, pepper, garlic, and lemon juice are all good options.
  • Serve the kale immediately. Kale is best served immediately after cooking, while it's still warm and tender.

Conclusion:

Garlicky Lemony Kale is a healthy and delicious side dish that can be enjoyed as part of a balanced meal. It's simple to make and can be tailored to your own taste preferences. With its vibrant green color and slightly bitter flavor, Garlicky Lemony Kale is a great way to add some extra nutrition to your diet.
