Tips:

  • Use waxy potatoes: Waxy potatoes hold their shape better than starchy potatoes, making them ideal for potato salad. Good varieties include Yukon Gold, Red Bliss, and New Potatoes.
  • Boil potatoes until just tender: Overcooked potatoes will become mushy in the salad. To check for doneness, insert a fork into a potato; it should go through easily but still have a slight resistance.
  • Cool potatoes completely before dressing: This will help the potatoes absorb the dressing better and prevent them from becoming watery.
  • Use a good quality vinegar: The vinegar is a key ingredient in the dressing, so use a good quality one that you enjoy the taste of. Apple cider vinegar, white vinegar, and red wine vinegar are all good choices.
  • Add bacon and dill to taste: The amount of bacon and dill you add is up to your personal preference. Start with a small amount and add more to taste.
  • Serve immediately or chill: German potato salad can be served immediately or chilled for later. If you are chilling the salad, let it come to room temperature for 30 minutes before serving.

Conclusion:

German potato salad is a delicious and easy-to-make dish that is perfect for picnics, potlucks, and BBQs. It is also a great way to use up leftover potatoes. With its creamy dressing, crispy bacon, and fresh dill, this salad is sure to be a hit with everyone who tries it.
