AUTHENTIC GERMAN POTATO SALAD
This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

I'd always loved my grandmother's German potato salad. So when I married a potato farmer-and had spuds in abundance-I played with several recipes that sounded similar and came up with this salad that reminds me of hers. - Sue Hartman, Parma, Idaho

GERMAN POTATO SALAD
The reassurance of potato salad, its portability, conviviality and - depending on the cook - blank slate for creativity have been appealing to Americans since the last half of the 19th century. Immigrants and travelers to America introduced many styles, including variations of salade Nicoise (the French salad of potatoes, olives, green beans and tuna, dressed with vinaigrette), and salade Russe (cubed potatoes, peas and carrots bound with mayonnaise). German settlers brought hot potato salad, and that savory combination of warm potatoes lightly dressed with hot bacon fat and vinegar became entrenched in Pennsylvania and throughout the Midwest. This is an adaptation of a classic version that was first published in the 1931 edition of "The Joy of Cooking."

GERMAN POTATO SALAD WITH SAUSAGE
Hearty and saucy, this potato salad is an old family recipe that was updated using cream of potato soup to ease preparation. Despite the "salad" name, this is a hot and filling dish that brings comfort food to the supper. The sausage and sauerkraut give it a special zip. -Teresa McGill, Trotwood, Ohio

GERMAN POTATO SALAD WITH SAUSAGE
From Taste of Home. I love crock pot recipes. This one's a winner! My family raved about it. Leftovers are very flavorful. Cooking time is time in the crock pot. Easy! Not really a salad at all, but a HUGE one dish meal. You'll be more than satisfied with this one.

Steps:
- Cook bacon over medium heat until crisp. remove and drain.
- Saute onion in the drippings for one minute.
- Add sausage, cook until lightly browned.
- Add potatoes, cook 2 minutes longer.
- Drain. Transfer to a 3 quart slow cooder.
- In a small bowl, combine the remaining ingredients.
- Pour over sausage mixture.
- Cover and cook for 5-7 hours on low until potatoes are tender.
Tips:
- Use a variety of potatoes: Yukon Gold, red, and fingerling potatoes all work well in this salad. Waxy potatoes hold their shape better than starchy potatoes, so they're less likely to fall apart when cooked.
- Cook the potatoes until they're just tender: Overcooked potatoes will be mushy and won't hold their shape. To check if the potatoes are done, insert a fork into the center of a potato. If the fork goes in easily, the potatoes are done.
- Let the potatoes cool completely before slicing them: This will help to prevent them from breaking apart.
- Use a sharp knife to slice the potatoes: This will help to create clean, even slices.
- Don't overdress the salad: A little bit of dressing goes a long way. If you add too much dressing, the salad will be soggy.
- Serve the salad warm or at room temperature: German potato salad is traditionally served warm, but it can also be served at room temperature.
Conclusion:
German potato salad is a delicious and versatile dish that can be served as a side dish or a main course. It's perfect for picnics, potlucks, and barbecues. With a few simple ingredients and a little bit of time, you can make this classic German dish at home.
