GLUTEN-FREE SOURDOUGH SANDWICH BREAD

Gluten-Free Sourdough Sandwich Bread image

True sourdough flavor in a hearty, gluten-free bread ready for your sandwich fixings. I love the taste of this bread with butter and jam or toasted and served with soup, even though it is delicious on its own. It will hold up to spreading peanut butter or avocado.

Yield 8

Number Of Ingredients 7

½ cup gluten-free sourdough starter discard
1 cup gluten-free all-purpose baking flour
½ teaspoon fine sea salt
10 tablespoons non-chlorinated water, or more if needed
1 teaspoon vegetable oil
1 teaspoon water
2 teaspoons sesame seeds

Steps:

  • Line an 8x4x2 1/2-inch loaf pan with parchment paper.
  • Mix sourdough starter discard, flour, and salt in a stand mixer on low speed. Add water, 1 tablespoon at a time, until dough is combined and comes together. Add only enough water to create a cross between a dough and a thick batter; the amount you need will depend on the types of flours in your mix. Use a rubber scraper to pour the dough into the lined loaf pan. Cover loosely with plastic wrap.
  • Put into the cold oven to rise overnight, or for up to 12 hours. Remove loaf from the oven. Mix 1 teaspoon oil and water and sprinkle on top of the risen loaf. Top evenly with sesame seeds.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Bake in the preheated oven for 20 minutes. Reduce heat to 375 degrees F (190 degrees C) and continue baking until the internal temperature reaches 190 degrees F (87 degrees C), about 20 minutes more.
  • Remove bread from the oven and allow to cool for 5 minutes. Remove from the loaf pan, peel off the parchment paper, and cool on a cooling rack. Wait until completely cooled before slicing.

Time 50m

Yield 1 Bread Loaf, 18 serving(s)

Number Of Ingredients 12

3 tablespoons honey
1 1/4 cups warm water (between 110 - 115 degrees F)
2 3/4 active dry yeast (NOT instant yeast)
3 eggs, at room temperature
3 tablespoons olive oil
2 teaspoons apple cider vinegar
2 cups brown rice flour
1/2 cup tapioca starch
1/2 cup arrowroot
1/2 cup blanched almond flour
2 3/4 teaspoons xanthan gum
1 1/4 teaspoons sea salt

Steps:

  • In a small mixing bowl, combine the honey and the warm water; mix until the honey is dissolved. Sprinkle in the yeast and give it a quick stir to combine. Allow to proof for 10 minutes (set a timer!) - NO more, NO less time. Make sure you have the other wet and dry ingredients mixed and ready to go when the 10 minutes are up!
  • Using a heavy duty mixer, combine the dry ingredients.
  • In a separate mixing bowl, whisk together the eggs, oil, and vinegar.
  • When the yeast is done proofing, add the wet ingredients to the dry. Stir until it's a little paste-like, then add the yeast mixture. Using your mixer's low speed setting, mix for about 30 seconds. Scrape the sides of the bowl then mix on medium for about 2 minutes or until the dough is smooth. (You may need to stop your mixer and scrape the sides of your bowl a few more times.).
  • Pour dough into a parchment lined and well greased 9 x 5" bread pan and cover with plastic wrap. Allow to rise for 45-60 minutes (Check the loaf 30 minutes into rising. When the dough is close to hitting the plastic wrap, remove it; allow the dough to rise the remaining time uncovered.) When the dough is just starting to crest the top of the pan, bake for 30 minutes in a preheated 375 degrees (F) oven.
  • Remove loaf from pan and allow it to cool on a wire rack.
  • Enjoy it!

Time 30m

Yield 4 wraps, 4 serving(s)

Number Of Ingredients 16

1/4 cup sorghum flour
1/4 cup millet flour
1/4 cup potato starch (not potato flour)
1/4 cup tapioca starch
1 tablespoon yeast
2 tablespoons dry buttermilk
2 teaspoons xanthan gum
3/4 cup warm water (plus more as needed)
1 1/2 teaspoons agave nectar
1 teaspoon olive oil
1 teaspoon apple cider vinegar
3/4 teaspoon salt
3/4 teaspoon cracked black pepper (optional)
3/4 teaspoon cumin (optional)
3/4 teaspoon dill (optional)
3/4 teaspoon fennel (optional)

Steps:

  • Preheat oven to 400°F.
  • Mix together all dry ingredients in the bowl of mixer.
  • Mix together water (start with 3/4 cup), agave nectar, olive oil and vinegar.
  • Pour liquid ingredients into dry and mix on low until blended. The dough should not resist the beaters and bounce around in the bowl but rather be more of a soft cookie dough - maybe even a bit more wet.
  • Beat the dough on high for no more than 2 minutes.
  • Line a jelly roll pan with parchment paper. Spread the dough as thinly as possible to cover the 10 x 15″ jelly roll pan. (To do this, I used a rubber spatula and kept dipping it in to water to keep the dough from sticking. This dough is not really as sticky as you might think - but the extra water helps push it out easier.).
  • Bake at 400F for 13-16 minutes until the top begins to brown and the edges are browned. Let cool completely before storing in an airtight bag.

Tips:

  • For a softer bread, use a combination of almond flour and tapioca flour.
  • If you don't have xanthan gum, you can use 1 teaspoon of guar gum or 2 teaspoons of flaxseed meal.
  • If you want a more rustic bread, use a combination of different gluten-free flours, such as oat flour, buckwheat flour, and sorghum flour.
  • Be sure to measure your ingredients accurately, as this will affect the texture of the bread.
  • Don't overmix the batter, as this will make the bread tough.
  • Let the bread cool completely before slicing and serving.

Conclusion:

Gluten-free sandwich bread is a delicious and healthy alternative to traditional wheat bread. It is perfect for people with celiac disease or gluten intolerance, as well as for those who are simply looking for a healthier option. With so many different recipes available, there is sure to be a gluten-free sandwich bread that everyone will enjoy.
