This is the first recipe that I have created on my own. It was a complete miscalculation of ingredients, hence the 'gooey' portion of the name. It turned out pretty darn good. I like it, my husband likes it, and the guests I force to try it actually like it. I hope you do too.

4 very ripe bananas
1 (30 ounce) can pumpkin pie mix
3 cups all-purpose flour
1 cup brown sugar
¾ cup butter, softened
3 eggs, beaten
1 teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch baking pan with cooking spray.

1 ⅓ cups canned pumpkin puree
½ cup honey
½ cup white sugar
2 ½ cups all-purpose flour

2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
¾ cup raisins
½ cup walnut pieces

2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1 teaspoon kosher salt
4 very ripe bananas
4 large eggs
2 cups sugar
One 15-ounce can pure pumpkin puree (about 1 1/2 cups)
1 cup vegetable oil
1/2 cup sour cream
2 teaspoons pure vanilla extract
6 tablespoons raw pepitas

Steps:

  • Preheat an oven to 350 degrees F. Line two 9 by 5-inch loaf pans with parchment paper, leaving a 2-inch overhang on the longer sides, then spray with nonstick cooking spray.
