GORGONZOLA PEAR SALAD WITH MERLOT SHALLOT DRESSING

Gorgonzola Pear Salad With Merlot Shallot Dressing image

An elegant summer salad...found at The Fresh Market and tweaked slightly! Not sure why it was dubbed "Merlot" Shallot Dressing, as the original recipe calls for Rose. I used a Pinot Noir and enjoyed the results, so I think any lighter red will work well.

Categories     Salad Dressings

Time 40m

Yield 4 salads, 4 serving(s)

Number Of Ingredients 13

1 large shallot, finely minced
2 cups light red wine
1/4 cup red wine vinegar
1 tablespoon brown sugar
1 garlic clove, minced
2 teaspoons Dijon mustard
3/4 cup olive oil
salt and pepper, to taste
5 ounces mixed baby greens
1/2 cup gorgonzola, crumbled
1/2 cup walnuts, toasted and chopped
3 slices smoked bacon, cooked and crumbled (omit for vegetarian version)
1 pear, cored, and chopped (can peel if desired)

  • Combine shallots and wine in a medium sauce pan over high heat. Bring liquid to a boil. Reduce heat to medium and simmer until reduced to 1/4 cup, about 20 to 30 minutes.
  • Let mixture cool completely. Add vinegar, sugar, garlic and mustard. Slowly whisk in olive oil. Season with salt and pepper. Refrigerate dressing until ready to serve.
  • In a large bowl, mix baby lettuce, cheese, walnuts and bacon. Add pears and toss with Merlot Shallot Dressing just before serving.

Tips:

  • Use ripe pears. Choose pears that are slightly soft to the touch and have a sweet, fragrant aroma. Avoid pears that are hard or bruised.
  • Slice the pears thinly. This will help them absorb the dressing and cook evenly in the salad.
  • Use a good quality gorgonzola cheese. Look for a cheese that is creamy and has a sharp, piquant flavor.
  • Crumble the gorgonzola cheese over the salad. This will help distribute the cheese evenly and add a nice visual appeal.
  • Use a light vinaigrette dressing. This will help keep the salad light and refreshing. Avoid using a heavy, creamy dressing, as this will overpower the delicate flavors of the pears and gorgonzola.
  • Add some nuts or seeds to the salad. This will add a nice crunch and extra flavor.
  • Serve the salad immediately. This will help prevent the pears from oxidizing and turning brown.

Conclusion:

Gorgonzola pear mesclun salad is a delicious and easy-to-make salad that is perfect for any occasion. The combination of sweet pears, sharp gorgonzola cheese, and light vinaigrette dressing is sure to please everyone. This salad is also a great way to use up leftover gorgonzola cheese. So next time you have some gorgonzola cheese on hand, be sure to try this salad!
