GRANDMA'S CHEESY BROCCOLI & CHICKEN CASSEROLE
This is down home comfort food at it's finest. It was the only way my grams or mom could get me to eat my broccoli while growing up. These days I use brown rice for a lower carb, healthier version. Sometimes I also use chicken thigh instead of breast because it's so much more tender. I hope you love it was much as I do.

From Grandma Smith. From this recipe, I make one large casserole and one 8-inch round casserole. I think the recipe could be halved easily, but when making for myself, I freeze one casserole for later use. Freezes well.

Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor and texture of your casserole.
- Don't overcook the chicken. Chicken is best when it is cooked through but still tender and juicy.
- Make sure the sauce is thick enough. The sauce should be thick enough to coat the chicken and broccoli, but not so thick that it is gloppy.
- Use a variety of cheeses. This will give the casserole a more complex flavor.
- Don't be afraid to experiment. There are many different ways to make chicken broccoli casserole. Experiment with different ingredients and flavors to find the combination that you like best.
