GREEK MUSHROOM SALAD

This can be used as a side or appetizer. It's a little garlicky, a little lemony, a little tart, a little sweet. It was inspired by a recipe in "The Vegetarian Journal" (Sept/Oct '94)

Number Of Ingredients 13

small amount of oil
1/2 lb fresh mushrooms, quartered (or sliced if you prefer)
3 clove garlic, minced
1 tsp dry basil
8 oz cherry tomatoes, halved
salt to taste
pepper to taste
small amount of feta cheese to garnish, if desired
DRESSING
4 Tbsp olive oil
4 Tbsp lemon juice
1 1/2 Tbsp sugar
1 tsp dried parsley

Steps:

  • 1. Place tomato halves in a medium bowl and set aside.
  • 2. Heat a small amount of oil in a medium skillet. Gently saute mushrooms for 2-3 minutes, don't over cook.
  • 3. Add garlic, basil, salt and pepper. Cook for another minute or two. Remove from heat and cool. Add to tomatoes.
  • 4. Mix together olive oil, lemon juice, sugar and parsley in a measuring cup.
  • 5. Stir dressing gently into tomato mushroom mixture. Allow to marinate for at least 1 hour, stirring occasionally. Check salt and add if needed.
  • 6. Drain before serving. Garnish with feta cheese, if desired.

Tips:

  • Select the right mushrooms: Use fresh, firm mushrooms for the best flavor and texture. Avoid mushrooms that are bruised or slimy.
  • Clean the mushrooms properly: Gently wipe the mushrooms with a damp cloth or paper towel to remove any dirt or debris. Avoid rinsing the mushrooms under running water, as this can make them soggy.
  • Slice the mushrooms evenly: This will help them cook evenly. If you are using a variety of mushrooms, slice them all to a similar size.
  • Use high-quality olive oil: Extra virgin olive oil is the best choice for this salad, as it has a rich flavor and aroma. If you don't have extra virgin olive oil, you can use regular olive oil.
  • Season the mushrooms well: Use a combination of salt, pepper, and garlic powder to season the mushrooms. You can also add other herbs and spices, such as oregano, thyme, or rosemary.
  • Cook the mushrooms until they are tender: Cook the mushrooms over medium heat until they are tender and slightly browned. This usually takes about 10 minutes.
  • Let the mushrooms cool: Allow the mushrooms to cool slightly before adding them to the salad. This will help prevent the salad from becoming watery.
  • Use fresh herbs: Fresh herbs, such as parsley, cilantro, or basil, add a pop of flavor and color to the salad.
  • Serve the salad immediately: This salad is best served immediately after it is made. The mushrooms will start to wilt if they sit for too long.

Conclusion:

Greek mushroom salad is a delicious and healthy dish that can be enjoyed as a main course or a side dish. It is packed with flavor and nutrients, and it is a great way to get your daily dose of vegetables. With its simple ingredients and easy-to-follow instructions, this salad is a perfect choice for busy weeknights or casual gatherings.
