GREEK STYLE ORZO SALAD WITH BALSAMIC VINAIGRETTE

Greek Style Orzo Salad With Balsamic Vinaigrette image

This is a variation of a recipe I came up with years ago. Because the ingredients are combined while the pasta is still warm, the dressing really soaks in and some of the cheese melts, leaving a creamy texture. I usually have a little bit of the dressing left over, which I save for spinach salad later. Hope you enjoy!

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 cup orzo pasta (1/2 lb)
1 cup crumbled feta cheese
1 cucumber, seeded and thinly sliced
1/2 yellow bell pepper, chopped
10 -15 grape tomatoes, halved
3/4 cup black olives, preferably kalamata, pitted and halved
1/2 cup bottled greek vinaigrette dressing (or homemade)
1/2 cup scallion, chopped

Steps:

  • In a large saucepan of lightly salted, (add tsp olive oil, if desired) boiling water, cook orzo until al dente, about 8 minutes.
  • Pour into colander and rise under cold running water.
  • Drain well.
  • Set aside.
  • In a medium bowl, combine orzo with feta, cucumber, bell pepper, tomatoes, and olives.
  • Pour dressing over salad, toss gently to combine, and sprinkle with scallions on top.

Tips:

  • Choose high-quality ingredients: Fresh vegetables, flavorful herbs, and a good-quality olive oil will make a big difference in the taste of your salad.
  • Cook the orzo al dente: This means that it should be tender but still have a slight bite to it. Overcooked orzo will be mushy and unpleasant.
  • Don't overdress the salad: A little vinaigrette goes a long way. You can always add more if needed, but it's hard to take it away once it's been added.
  • Let the salad marinate: This will allow the flavors to meld and develop. You can marinate the salad for as little as 30 minutes or up to overnight. .

Conclusion:

Greek orzo salad is a delicious and refreshing dish that is perfect for summer gatherings. It is easy to make and can be customized to your liking. With its bright flavors and healthy ingredients, this salad is sure to be a hit!
