2 tablespoons minced fresh basil or 2 teaspoons dried basil
3 tablespoons olive oil, divided

2 tablespoons minced fresh oregano or 2 teaspoons dried oregano

1 pound uncooked large shrimp, peeled and deveined

3/4 pound orzo pasta (rice-shaped pasta)
1/2 cup freshly squeezed lemon juice (3 lemons)
Freshly ground black pepper
2 pounds (16 to 18 count) shrimp, peeled and deveined
1 cup minced scallions, white and green parts
1 cup chopped fresh dill
1 cup chopped fresh flat-leaf parsley
1 hothouse cucumber, unpeeled, seeded, and medium-diced
1/2 cup small-diced red onion
3/4 pound good feta cheese, large diced

Steps:

  • Preheat the oven to 400 degrees F.
  • Fill a large pot with water, add 1 tablespoon of salt and a splash of oil, and bring the water to a boil. Add the orzo and simmer for 9 to 11 minutes, stirring occasionally, until it's cooked al dente. Drain and pour into a large bowl. Whisk together the lemon juice, 1/2 cup olive oil, 2 teaspoons salt and 1 teaspoon of pepper. Pour over the hot pasta and stir well.
  • Meanwhile, place the shrimp on a sheet pan, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine and spread out in a single layer. Roast for 5 to 6 minutes, until the shrimp are cooked through. Don't overcook!

1/2 cup olive oil, plus additional for brushing shrimp

500gr shrimps or prawns (17.6 oz)
400gr orzo pasta (14.1 oz)
1 medium sized onion
2 medium sized tomatoes (200gr canned tomatoes or cherry tomatoes)
50ml extra virgin olive oil (3.3 tablespoons olive oil)
1 1/2 teaspoon tomato paste
1/2 teaspoon black pepper
4-5 sprigs parsley or dill
Ingredients (shrimp with pasta)
500gr shrimps or prawns (17.6 oz)
500gr pasta. (17.6 oz)
1 medium sized onion
1 large tomato (100gr canned tomatoes or cherry tomatoes)
1 teaspoon tomato paste
50ml extra virgin olive oil (3.3 tablespoons olive oil)
1- 1 1/2 teaspoon salt
1/2 teaspoon black pepper
4-5 sprigs parsley or dill
Shrimp (shellfish) stock
700ml water
shrimp shells and heads

Steps:

  • Shrimp (shellfish) stock
  • To prepare the shrimp stock, in a pan pour 700ml water and add the shrimp heads and shells. Boil over medium heat for 20 minutes. Strain the stock and set it aside.
  • Shrimp with orzo
  • Finely slice the onion and sauté it over a hot pan for 2-3 minutes. Continue by adding the tomato paste and cook for a further 1 minute. Add the chopped (or canned) tomatoes, season with salt and pepper and cook for 2-3 minutes.
  • Add the shell fish stock in the tomato sauce, stir and add the orzo. Make sure there is enough shell fish stock to cover the orzo so that it can cook properly. Cook the orzo for 10 minutes.
  • Finally add the prepared shrimp with the herbs and cook for a further 5-7 minutes. At this point, the orzo would have absorbed all the delicious shellfish stock.
  • Shrimp with pasta
  • Sauté the finely sliced onion for 2-3 minutes. Carry on by sautéing the garlic for a few seconds. Continue by adding the tomato paste and let it cook for 2-3 minutes. At this point add the chopped or canned tomatoes and season. Cook for 2-3 minutes.
  • Continue by adding the shell fish stock to the tomato sauce. Stir and add the pasta. Cook the pasta for 10 minutes. Make sure there is enough shell fish stock for the pasta. If not, simply add a bit more water.
  • Add the prepared shrimps with herbs and cook for a further 5 minutes. The pasta should now have absorbed all the delicious juices from the shellfish stock and the tomato sauce.
