2 cups 4% cottage cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
8 ounces crumbled feta cheese
6 tablespoons all-purpose flour
1/2 teaspoon pepper
1/4 teaspoon salt
4 large eggs, lightly beaten

Steps:

  • Preheat oven to 350°. In a large bowl, combine the cottage cheese, spinach and feta cheese. Stir in the flour, pepper and salt. Add eggs and mix well. , Spoon into a greased 9-in. square baking dish. Bake, uncovered, until a thermometer reads 160°, about 1 hour.

1 egg, room temperature, and separated
1 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2-1 teaspoon sugar
1/8 teaspoon garlic powder
1/4 teaspoon dried dill (optional)
3/4 cup milk
1/3 cup crumbled feta cheese
1/3 cup cooked spinach, well drained and chopped (squeeze out any excess water with hands)
4 tablespoons butter or 4 tablespoons margarine, melted

Steps:

  • Heat a waffle maker to hot.
  • In a bowl, beat the egg white until stiff; set aside.
  • In another bowl, mix togather the dry ingredients; set aside.
  • Combine the egg yolk, milk, feta cheese and oil; add to the dry ingredients, mixing just until blended.
  • Fold in the beaten egg white JUST until mixed (don't over mix).
  • Bake as directed in a waffle maker.

1 cup olive oil
2 onions, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 large tomatoes, coarsely chopped
3 cups water
1 clove garlic, minced
1 tablespoon tomato paste
1 cube beef bouillon
salt and pepper to taste
½ cup uncooked long-grain white rice

Steps:

  • Heat olive oil in a medium saucepan over medium heat. Stir in onions, and cook until tender. Mix in spinach. Stir in tomatoes. Allow vegetables to simmer about 5 minutes
  • Pour 2 cups water into saucepan, and bring to a boil. Mix in garlic, tomato paste, bouillon cube, salt and pepper. Reduce heat, and cook at a low boil about 15 minutes, until water is reduced by half.
