SOMETHING DIFFERENT GREEN BEAN AND CORN CASSEROLE

Something Different Green Bean and Corn Casserole image

Adapted from Southern Living. This is very different from the usual green bean casseroles out there. I prefer sweet onions such as Walla Walla or Vidalia, but ordinary cooking onions are fine too. French style green beans are regular green beans that have been thinly sliced. If all you have is the regular kind, simply slice them into thin strips with a knife or use them whole.

1 can(s) white shoepeg corn
1 can(s) french cut green beans
1 small diced onion
1 c shredded cheddar cheese
1 can(s) cream of celery
1 c sour cream
1 pkg ritz crackers
1 stick butter

Steps:

  • 1. Preheat oven to 350 degrees. In medium size casserole dish add: corn, green beans, onion, cheese, cream of celery, and sour cream. Mix it all together until it is well incorperated. ***(Do drain the corn and green beans!)***
  • 2. Take one, unopened pack of ritz crackers and crumble it (while in pack). TIP: I drape a kitchen towel over it had pound it softly with my palm.
  • 3. Melt the stick of butter in a small sauce pan on the stove, OR melt butter in a microwave safe bowl in microwave. Once its melted completely, add the ritz cracker crumbles and stir until butter coats the crumbs.
  • 4. Pour the ritz cracker crumbs on top of the casserole until it is completely covered. Depending on the size of casserole dish, you may need to repeat step 2 and 3 to cover casserole completely.
  • 5. Place casserole in the oven and bake for 45 - 50 minutes. Once it is finished baking, allow it to rest about 15 minutes before serving. SCRUMPTIOUS aint the word!!! :)

Tips:

  • To save time, use frozen corn and green beans instead of fresh.
  • Using cream of celery soup and cream of mushroom soup gives the casserole a rich and creamy flavor.
  • Add a cup of shredded cheddar cheese for a cheesy variation.
  • To make the casserole crispy, top it with crushed buttery crackers or panko breadcrumbs before baking.
  • For a vegetarian version, omit the bacon and use vegetable broth instead of chicken broth.

Conclusion:

Green bean corn casserole is a classic side dish that is perfect for potlucks, holiday dinners, and everyday meals. It is easy to make, and can be tailored to your own taste preferences. With its creamy sauce, tender vegetables, and crispy topping, this casserole is sure to be a hit with everyone at the table.
