Yield 24

Number Of Ingredients 14

16 oz medium egg noodles
1 tsp butter
3 lb lean ground beef
oil
5 - 8 oz cans tomato sauce
1 TBS sugar
1 tsp garlic salt
½ tsp pepper
2 cups cottage cheese, large curd (Keith note:/ricotta)
1 - 8 oz package cream cheese
1 cup sour cream
2 - 4 oz cans green chile, chopped
1 cup green onions and tops, thin slices
Parmesan cheese

Steps:

  • Cook noodles according to package directions. Drain and add the butter. In a skillet, brown the beef in a small amount of oil. Set aside. In a large sauce pan, combine the tomato sauce, sugar, garlic salt, salt, and pepper. Add browned meat and simmer until meat is tender (about 30 min). Skim off any grease. Mix cheeses, sour cream, green chile, and green onion until soft and creamy. Fill two 9"x 13" x 2" pyrex dishes in this order: ¼ of the noodles, cover with ¼ of the meat sauce, ½ the cheese mixture, ¼ of the noodles, ¼ of the meat sauce and finish with a heavy topping of grated parmesan cheese. Cover with foil and refrigerate. Cook in 350° oven for 45 minutes. This is better if prepared the day before and cooked when ready to use. Serves 24. Makes a lot. Serve BIG GROUPS. Tastes great even after it's been frozen.

Tips:

  • To save time, use a pre-made lasagna noodle kit. If you're making your own noodles, be sure to cook them al dente so they don't become too soft in the lasagna.
  • Use a variety of cheeses in your lasagna. A good combination is a blend of mozzarella, Parmesan, and ricotta cheeses. You can also add other cheeses, such as cheddar or goat cheese, to taste.
  • Don't be afraid to experiment with different fillings. In addition to the traditional fillings of ground beef and sausage, you can also try using chicken, turkey, or vegetables. You can also add other ingredients, such as mushrooms, onions, or bell peppers, to your filling.
  • Be sure to layer your lasagna properly. Start with a layer of sauce, then add a layer of noodles, followed by a layer of filling, and then a layer of cheese. Repeat this process until you have used up all of your ingredients.
  • Bake your lasagna in a preheated oven until it is bubbly and the cheese is melted and golden brown. This will usually take about 30 minutes.
  • Let your lasagna cool for a few minutes before serving. This will allow the lasagna to set and make it easier to slice.

Conclusion:

Green chile lasagna is a delicious and versatile dish that can be enjoyed by people of all ages. It's perfect for a weeknight dinner or a special occasion. With so many different variations to choose from, there's sure to be a green chile lasagna recipe that everyone will love.
