COLORADO GREEN CHILI (CHILE VERDE)

Colorado Green Chili (Chile Verde) image

My version of my mother's green chili. I like to serve it over oven-baked burritos or with beans and rice. If you can't find a chile roaster, look for frozen diced chiles at your supermarket. You can also freeze fresh roasted chiles for off-season use.

Time 1h35m

Yield 6

Number Of Ingredients 11

1 tablespoon olive oil
1 ½ pounds cubed pork stew meat
salt and pepper to taste
1 large yellow onion, diced
4 cloves garlic, minced
2 cups chopped, roasted green chiles
1 (14.5 ounce) can diced tomatoes with juice
1 ½ cups tomatillo salsa
5 cups chicken broth
½ teaspoon dried oregano
1 pinch ground cloves

Steps:

  • Heat the olive oil in a Dutch oven or large pot over medium-high heat. Season the pork with salt and pepper to taste, then place into the hot oil. Cook until golden brown on all sides, about 7 minutes. Once browned, remove the pork and set aside. Reduce heat to medium, and stir in the onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Return the pork to the pot, and stir in the green chiles, diced tomatoes with juice, tomatillo salsa, and chicken broth. Season with oregano and clove. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
  • After 20 minutes, remove 2 cups of the soup (ensure there are no pork cubes in it), and pour into a blender. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree until smooth, then pour back into the cooking pot. This will create a thicker texture for your chili and will eliminate some of the chunky bits of chiles. Continue to simmer, stirring occasionally until the pork is very tender, at least 35 minutes more.

Tips:

  • Choose the right chiles. Poblano peppers are the most common type of chile used for green chili flautas. They have a mild to medium heat level and a slightly smoky flavor. You can also use Anaheim peppers, which are similar to poblanos but slightly milder. If you want a spicier flauta, you can use serrano peppers or jalapeños. Just be sure to remove the seeds before using them, as they are the hottest part of the pepper.
  • Roast the chiles. Roasting the chiles brings out their flavor and makes them easier to peel. You can roast them on a grill, over an open flame, or in the oven. If you're roasting them on a grill or over an open flame, be sure to keep them close to the heat source so that they blister and char. If you're roasting them in the oven, preheat the oven to 400 degrees Fahrenheit and roast the chiles for 15-20 minutes, or until they are charred and blistered.
  • Peel and seed the chiles. Once the chiles are roasted, let them cool slightly before peeling and seeding them. To peel the chiles, simply use your fingers to pull the skin off. To seed the chiles, cut them open lengthwise and remove the seeds and ribs.
  • Make the filling. There are many different ways to make the filling for green chili flautas. Some common ingredients include shredded chicken, beef, or pork, potatoes, corn, onions, and cheese. You can also add spices, such as cumin, chili powder, and oregano, to taste. Just be sure to cook the filling thoroughly before assembling the flautas.
  • Assemble the flautas. To assemble the flautas, simply spoon some of the filling onto a tortilla and roll it up. You can then secure the flautas with toothpicks or string.
  • Fry the flautas. Heat some oil in a large skillet or deep fryer. Once the oil is hot, carefully add the flautas and fry them until they are golden brown and crispy. Drain the flautas on paper towels before serving.
  • Serve the flautas. Green chili flautas can be served with a variety of dipping sauces, such as guacamole, salsa, or sour cream. You can also top them with shredded cheese, lettuce, or tomatoes.

Conclusion:

Green chili flautas are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover chicken, beef, or pork. With a little planning and effort, you can easily make green chili flautas at home.
